Grandma's Doughnuts

Surprisingly good and easy! Use coconut oil to fry them in and they are light, fluffly and not overly oily/greasy. We tried sugar glaze, chocolate, strawberry, etc.- fun to make!

Homemade Chewy Granola Bars

I've made these several times, and it's nice to be able use whatever I have in the cabinet. I've added nuts, different flavored chips, flax seeds, etc. I've also use 2 cups oats, and 1 cup steel cut oats and instead of 1/2 cup corn syrup, I use 3/4 cup agave syrup, and am able decrease the butter by a couple of tablespoons. THANKS- great recipe- my kids love granola bars, glad to make these healthier, much more affordable ones.

Whole Wheat Snickerdoodles I

Made exactly- flatten very slightly with a cup, my first batch I flattened too much. Baked only 8 min., any longer and they'd be too crispy! Very good!

Jacky's Fruit and Yogurt Muffins

Love these! I use different fruits for variety, and whole wheat flour for the all-purpose and ground flax (about 1/4 c. flax, any more and they don't turn out, and then the wheat) and 3/4 cup sugar. Make these almost once a week as a quick breakfast for my kids before school. YUMMY!

Baked Kale Chips

I only remove the large stems, the rest stay with the leaves. I pat dry with paper towel. I don't use parchment paper- don't seem to need it, just spray sheet with oil. I also spray the leaves with olive oil and sprinkle with seasonings based on my taste- sometimes garlic salt, or sea salt or cajun- an addictive, can't stopping eating them snack!

Chocolate Brittle Surprise

YUMMY- whole family likes it, an easy, inexpensive treat! Haven't tried graham crackers yet, but will! We use less chocolate and sometimes none as the rest is really good without it.

Cashew Avocado Chicken Salad

I make this for showers, luncheons and special occasions and it's a huge hit- incredibly delicious! (I buy real bacon bits and use them instead, otherwise I follow the recipe as is.) Serve on croissants for even better flavor! Thanks!!

Double Tomato Bruschetta

Awesome- have also made it into a salad type dish- using fresh mozzarella balls, and serve with the sliced, toasted baguette on the side (brush with olive oil, lightly sprinkle with garlic powder and Parmesan cheese), easier to bring to potlucks that way (no baking while there required.)

The Real Mojito

Really good! Don't use spiced rum- it has to be white! I use natural sugar, which doesn't dissolve well. I now use sweetened lemon-lime or citrus sodas instead of the club soda & sugar. I also add extra fresh squeezed lime and get rave reviews!

Yummy! Cooked fish on grill- use bluegills we caught. Added avocado slice to each taco. Didn't use jicama - couldn't find one. Really good.

Slow-Cooker Pepper Steak

A delicious recipe! I didn't brown the meat in a pan, but right in the slow cooker- takes longer and doesn't get as brown, but it still turns out great! I've made the stovetop version, but this way the meat is more tender. I have always added some ginger powder to mine though. We serve it with mashed potatoes.

Macaroni and Cheese with Caramelized Onions and Bacon

A hearty mac and cheese! The topping is great- especially appreciated by my husband who isn't a big fan of mac and cheese. I accidentally cooked too long (got busy and forgot about it) and it came out dry- don't overcook!

A great variation for hamburgers! If you don't like MSG be careful of some ranch mixes as they have it- go for the organic or natural one to avoid it.

I feel guilty for all the compliments I got for making this cake- it was way to easy! All my kids say they want this for their birthdays now. Much more affordable than buying those premade ones at the store and more delicious.
