Banana Oat Muffins

I really liked this recipe but I tweaked it quite a bit so I hesitate to give the original 5 stars. I changed white flour to whole wheat for health benefits and used brown sugar instead of white and added an extra egg per other reviewers' suggestions. I also added chocolate chips which makes it less healthy and more delicious. With the eggs and chocolate added, the recipe made 18 muffins. Will definitely make again.

Oatmeal Peanut Butter Cookies

Fantastic! And the only reason I didn't give it 5 stars is that I felt it was necessary to make some modifications (so I liked my cookies 5 star worthy but changed the recipe). I don't like margarine/crisco so I used half butter and half coconut oil. I added a little extra oatmeal and skimped a touch on the white sugar. I also added vanilla so the coconut oil wouldn't be too intense. I baked for about 13 minutes (I used an ice cream scoop for consistent big sizing). Unrelated to flavor, I used 1 cup white flour and 1/2 cup whole wheat for nutrition.

Banana Banana Bread

Delicious! The only changes I made were taste preferences (added vanilla and chocolate chips). However I'd definitely agree with the not overmixing - mine was not tough and dense at all but I hand mixed just a little at the end. Also, for reference, I used 4 small bananas and two medium bananas (just used all leftover bananas in the house- I didn't measure)

Favorite Corn Bread

Used 1.25 c cornmeal which I soaked in 1.25 c milk first and then used 3/4 c flour instead of full cup. Used oil instead of butter/shortening and upped sugar to 1/3 c. Thought it was great - won't last 24 hours I am sure.

MMMMM... Brownies

Amazing - I made them exactly as the recipe stated. I took them out at about 28 minutes but they ended up being under done so next time I'll keep them in longer (may be my oven). But best brownies I have ever made and my husband agrees.

Oatmeal Chocolate Chip Cookies I

Chocolate Pretzels

Perfect! I made it as an activity with my toddler son - we unwrapped the kisses and color sorted the M&Ms together (fine motor skills and colors - educational, right?). I baked for 1 1/2 minutes (like previous reviewer said - they're good to go when shiny). I actually found the later ones were easier to smoosh b/c the heat from the pan melted them a little better by the end so I went and pushed the ones in further. I just used regular twist pretzels - small ones.

Buttermilk Oatmeal Muffins

These were perfect- exactly what I wanted. I added a touch of cinnamon and nutmeg and a little vanilla. My batch made 10 - I definitely could not have just made 8, they would have overflowed. I baked for 15 minutes and they were perfect.

Oaty Cereal Bars

Very yummy! I used corn syrup instead of honey and chex instead of cheerios. I added a touch of vanilla too but would recommend adding a dash of salt if you aren't using salted peanuts because I think you'd want something to balance out the sweetness. I smooshed them down into the pan with a spoon sprayed with Pam to really compress them so they'd stay in bar form and they did perfectly. Will definitely make again but probably improvise more.

Original Chex® Party Mix

Note: I baked in the oven for an hour instead of microwaving A good starting point but I like to make modifications (i.e. I added Cheez-Its as that's how we ate it growing up and added more pretzel [sticks] than called for). All that being said, I definitely think you need lots more of the seasoning. Because I added cheezits and more pretzels, I doubled the seasoning and still added more during baking. I'd probably double my doubling of the Worcestershire in the future and add more salt too.

Whole Grain Pancakes

Delicious! I added a little salt and we didn't have buttermilk and I was too lazy to make any so I used 1 1/2 cup of milk and a 4 oz vanilla yogurt container. These were fantastic - even my health-averse husband loved them.

Italian Square Meatballs

These were simple and tasty. I wouldn't call them sophisticated so if you are trying to impress someone, they wouldn't be my first choice - however, I'll probably make these for my family going forward because they are so simple. I did add garlic powder and would possibly swap out the ketchup for spaghetti sauce.

Fluffy Carrot Muffins with Cream Cheese Frosting

I thought these were perfect. I will admit that I made a few substitutions but not because I thought the original recipe was lacking - some were intentional, others not. Intentional: I used half regular flour, half whole wheat. I also used a little prune puree and used a little less oil (not much) to add extra nutrients - they were for a friend who just had a baby. Unintentional: Uhm, I ran out of everything (her visit was sorta last minute) - ran out of carrots - it takes quite a few to make 2 cups so I shredded some apples too (unpeeled for what it is worth). I also ran out of cinnamon so only had a little left and subbed allspice instead (I was going to use nutmeg and cinnamon both anyway so it is was good from a flavor perspective). Finally, I ran out of sugar (I know, I know - why I am even bothering at this point) at about 2/3 cup so I used powdered sugar and for the remainder but didn't make a full cup because of its density difference. Overall, they were fantastic. I would probably do the whole wheat again and maybe even the apple as they were really moist and wouldn't mind if I had to do it exactly over. It made closer to 15 muffins in my tins.

Whole Wheat Chocolate Banana Bread

I thought these muffins were delicious. I didn't curdle the milk but used whole milk instead. I also did not use nutmeg or cinnamon but added mini-chocolate chips. I made 12 large muffins and just ate one out of the oven - will definitely make again.

Amish White Bread

I only cut the sugar down slightly (maybe used 1/2 c) per others' suggestions and I thought it was perfect. Per breadguy, I did weigh the flour which changed the volume measurements a bit and used his kitchenaid directions. Will definitely make again (we ate on loaf in 24 hours)

Oatmeal Toffee Cookies

These were great! We didn't have any pecans, sadly, but they were so good regardless. We used just toffee chips - no chocolate on them- and they were fine. The cookies spread out a bit but it made them really nice with the toffee because they were gooey and crispy at the same time. We'll definitely make again.

Delicious Raspberry Oatmeal Cookie Bars

Amazing - I ate the whole pan in two days. I used a little more jam than called for (with seeds) and warmed it up like suggested by another poster. Next time, I'll add finely chopped pecans to the mix.
