Mexican Shepherd's Pie

Reviewed: Feb. 24, 2014
Admittedly I did make a few changes so I'm hesitant about how to rate this but my family agrees it's an average of 2.5 stars. I used some salsa and some canned tomatoes for the meat mixture which did add some flavor. I also used my own cornbread recipe (from this site), but it proved to be too much cornbread. Overall this wasn't bad, but it wasn't great. It's the sort of dish everyone ate without complaining but chances are the left overs will probably go to waste.

My Best Clam Chowder

Reviewed: Feb. 19, 2014
My daughter requested clam chowder after remembering having it at Disneyland, so like a good mom does (when she's been adequately buttered up and swayed by a sweet smile and batting eyelashes) I promised her is give it a whirl. Having never made homemade clam chowder I was nervous but or no reason. It was easy to make and turned out fabulous. My picky son who hates veggies of any type scarfed down two bowls. My daughter said it outranks Disneyland and is the "Best ever!" I agree. Will definitely be making this more often.

Plain and Simple Sourdough Bread

Reviewed: Feb. 19, 2014
Made this for the first time today using a new starter (2 weeks old) and i turned out fabulous! I did substitute milk for the water because I wanted a softer crust. I made mine in the oven, I baked bread bowls for 40 minutes at 375. I did use an egg wash as I was making bread bowls for chowder - and it turned out perfect. The dough was the best dough to work with. Very forgiving and very easy.

Modenese Pork Chops

Reviewed: Feb. 19, 2014
We love this recipe! Even my picky eaters who do not like pork chops love this. It makes an ordinary dinner feel like a special dinner out! :) Thicker pork chops are definitely better as they don't toughen as much.

Roasted Garlic Lemon Broccoli

Reviewed: Feb. 19, 2014
LOVE. LOVE. LOVE! We are big broccoli people and I almost always steam it with a dash of sea salt, so the idea of doing anything "too much" to my broccoli intimidated me and left me thinking I was going to end up with a bitter, mushy side dish but that couldn't be further from the what happened. This was delcious. I made it with the easy baked tilapia recipe here (http://allrecipes.com/recipe/easy-baked-tilapia/detail.aspx) and it was perfect. Will definitely do this

Banana Crumb Muffins

Reviewed: Feb. 19, 2014
I flowed this recipe to the T - with one "minor" difference. My bananas were not ripe enough for banana muffins so I ripened them in the oven as a few blogs I saw suggested. This may have been my downfall. The muffins were a great texture but they were a bit bland. I will definitely try them again using the "traditional" method of ripening bananas.

Cioccolata Calda (Hot Chocolate Italian-Style)

Reviewed: Feb. 19, 2014
Was essentially hot dark/butter chocolate pudding in a cup. I made this on a cold snowy day for my family plus a handful of kids from our street - sure that they would appreciate a thick, rich treat after shoveling snow. Much to my disappointment, nobody liked it. Despite putting equal amounts of cocoa powder and sugar in, it was too bitter. After pouring it into cups, I refrigerated the remaining "hot cocoa" and my husband who loves dark chocolate later ate it as pudding, but even he said it wasn't sweet enough.

Chocolate Fudge Buttercream Frosting

Reviewed: Mar. 29, 2013
I was so excited to find a chocolate buttercream frosting with such rave reviews, but I've to say, I really don't like it. I'm not sure what it is but to me, it almost tastes like a liquor. Much too grown up for the children's cake I used it for. The recipe is a great texture and consistency, and the color is beautiful but the flavor wasn't what I was looking for. I'd say it was more a matter of personal taste than anything. I did however love the light chocolate mousse filling I made from this site: Chocolate Mousse Cake IV.

Cuban Black Beans II

Reviewed: Jan. 26, 2013
This is a new family favorite!! I did tweak the recipe to fit what I had on hand and my family's finicky tastes but it still turned out delicious! I spent all of $5 on this meal and was able to use my kitchen staples for the rest - what a bargain for a delicious dish! I omitted the pimentos, tomato paste and vinegar and added 1 tsp cumin, 1/2 tsp tsp cayenne and a handful of chopped cilantro (I had some on hand - but next time I'll be sure to pick some up just for this dish). About 30 minutes from the end, I added 1 tsp cocoa powder to take the bite off the spice. This was so filling and yummy, and we have left overs for burritos tomorrow. Oh - and just for the record - I used dried beans, soaked over night - it was worth it to save my family from the sodium.

Angela's Awesome Enchiladas

Reviewed: Oct. 2, 2012
Our absolute favorite The only changes I make are to cook the chicken in the crockpot in chicken broth and with taco seasoning (other reviews suggested this), and then shred it with my mixer. LOVE, LOVE, LOVE this recipe. A family favorite and great for company.
