Sausage and Corn Casserole

Idabelle's recipe: Brown 1 lb sausage, diced onion. Remove from heat. Add 1 can cream corn, 1 C cubed cheddar or colby cheese, 4 eggs, 1 C crushed crackers (or bread crumbs or english muffins), 1/4 t pepper. Bake all together for 40 minutes at 350 degrees. Top with crumbled potato chips. Bake another 5 minutes.

Cream Puffs

use MommyFromSeattle's tips: Awesome recipe and so easy with such elegant results. I've made this recipe more times than I can count, and haven't changed a thing, except making the prep easier. No need to cool the water/butter mixture. Put the hot liquid into your mixer bowl and dump all 4 eggs in at once and mix IMMEDIATELY on med. speed. Mix until the dough is tacky and starts sticking to the side of the bowl and you're done - about 2-3 min. (Mixing in one egg at a time makes no difference in dough texture and only allows more time for your eggs to curdle in the hot liquid.) I use a heaping tablespoon of dough for each, bake exactly 20 min and then poke a small hole with a toothpick in the side of each puff. No need to let it sit in the oven (or it will dry out)or leaving the oven door ajar while cooling. Just let the steam escape with a toothpick and cool. Forget all the complicated posts on how to prevent deflation. I make this professionally for a bakery and my easy tips have never failed - try it.***Update- PLEASE use parchment paper to bake or it will stick. Don't grease your cookie sheet, or the bottoms will burn or get too brown. Also, add one teaspoon vanilla extract. This will help diminish with the 'eggy' taste. Good luck, and keep trying if you fail the first time. This should be a no-fail recipe.

Restaurant-Style Hashbrown Casserole

We prefer Mom's scalloped potatoes. This recipe uses cream soup and isn't like our scalloped potates or Cracker Barrel's.

Sweet Floret Salad

Simplified ingredients to broccoli, cauliflower, and raisins in a sauce 1/2 Cup of lite mayo mixed with 1/4 Cup of apple cider vinegar. No sugar added.

Cathy's Peanut Butter Fudge

microwave! Put brown sugar, butter and milk in a large bowl and stir. Microwave 3 min. on HI. Stir. Microwave 3 more min. on HI. Stir. Microwave 2 min. on HI. While in for the last 2 minutes, stir the cornstarch into water to dissolve. When the very hot, bubbly mixture comes out of the microwave, immediately stir in the cornstarch mixture, vanilla and peanut butter. Stir QUICKLY (it sets up really quick) and pour into a foil lined 8 x 8 pan. --Cathy

House Fried Rice

In the water for rice, add soy sauce and sesame oil, then cook following package directions. Fix scrambled eggs separately and set aside. Saute diced green onions, shredded carrots, peas, any other veggies and meat [we prefer just diced ham] in about 2 tablespoons of bacon grease. Stir all ingredients together and enjoy.

Picante Chicken Enchiladas

Awesome and so easy. Boil chicken in 2-1/2 cups water with salt and pepper, to make broth. Then pair this dish with Spanish Rice made with the broth. (Using the broth instead of water, cook veggies for rice recipe. Then also add extra broth to Spanish Rice recipe and steam covered in oven while Picante Chicken Enchiladas bake.)

Skillet Chicken Cordon Bleu

Good use of leftovers. (Canned chicken and mushroom soup work for substitutes.) Layer over hot cooked noodles, and Top with corn flakes. Bake @ 350 for about 15 minutes to toast the corn flakes. Yummy!

Spanish Rice

Very colorful. [Pairs well with Picante Chicken Enchiladas. Good combination.] I boiled chicken for enchiladas, and used the broth instead of water to saute veggies for rice. Then after cooking rice, added veggies and extra broth, and steamed it in oven while baking Enchiladas. Also used canned tomatoes--1 whole can--instead of fresh tomato, to allow for steaming.

Cornbread Pudding

I replaced sour cream with 1 stick butter, melted it first in casserole dish, then stirred in corn, jiffy cornbread, and 2 eggs. Microwaved 15 minutes, then topped with 1/4 cup corn flakes mixed with 1/4 c butter. Baked at 350 another 30 minutes. Good!

Cream Dill Sauce

Added 1/4 tsp onion powder instead of green onions, 1/8 tsp salt, 1/8 tsp celery seed, and used only Tbsp mayo (instead of 2) to 1/2 C sour cream and 2 tsp dill weed. Excellent flavor, just adjusted to my taste.
