Good Burger

This guy underestimates the name of his burger. My family is the most picky people you will ever feed, they really don't like change and usually we just add bbq sauce to the burgers after they are cooked. My dad doesnt like a whole lot of spice and my mom doesnt like onion. But i decided to try this out and they both loved it! Nether of them had any complaints about anything in it and now when we make burgers, they actually request that i make this recipe. When i make it just for myself, i add more cajun and sometimes a little hot sauce but other than that, I keep it the same. My only suggestion when making this recipe is that you may need to add more bread crumbs depending on what meat you buy. I had to add more because the patties weren't stable enough and we used extra lean ground beef. So just add more breadcrumbs if you feel you need to

Rolling Fondant

this is an incredibly simple recipe with great texture. i just microwaved the gelatin and water for 20 seconds and that worked well. putting the icing sugar in the bowl first and adding the other ingredients after, like other reviews suggested was good because you didnt have you worry about the corn syrup or anything sticking to the bottom of the bowl. a few tweaks i would suggest is first, that although it doesnt taste bad, its not as tasty as the marshmallow fondant, so maybe next time i will add a teaspoon or two of clear vanilla extract. second, you need to use the dough hook for the stand mixer, any other beater would be too big and will burn out the motor and not mix it properly. also, you dont need to mix it for 15 minutes. let the stand mixer mix it for about 5 or so minutes just to let the ingredients combine and start to hold together, then take it out and finish it up by kneading it on a surface dusted with cornstarch. you dont need to knead it for long, maybe 2 minutes? and i would skip the refridgeration if you are using it right away, it holds its shape extremely well and doesnt get too sticky.

Balsamic Marinated Chicken Breasts

this dish is very nice. i didnt have regular balsamic, so i used white balsamic, which has a milder flavor which i preferred anyway because i think the regular balsamic would have made it a little too strong. i tweaked some ingredients too. instead of dried onion i used onion powder (fresh onion would probably work well too) and 2 cloves of minced fresh garlic instead of dried. i marinated it overnight and then barbequed it and it was very juicy and my dad even liked it, and he is incredibly picky. i will definitly make this again! :)

Marshmallow Fondant

this tasted amazing, but it was very difficult to make. needed alot more icing sugar than called for. and cracked fairly easily when putting on the cake. you also need to make sure it is thoroughly warmed to room temperature or it will crumble and not hold together. i kneeded it with corn starch which i find made it less sticky than using just the icing sugar. overall, it turned out pretty good, but you have to be careful and make sure you are not on a time-constraint when making it

Christmas Creamy Egg Nog

i love this recipe!!! its easy to make and not too thick or too thin. when my family buys eggnogg we always dillute it with roughly 1/3-1/2 amount of milk, and this recipe turns out just like this without dilluting it. i substituted the sugar for icing sugar so it blends better and mixed in the 1/4 tsp of nutmeg and added a 1/4 tsp of cinamon as well and it tastes delicious :) will definitly be making this for Christmas i

Cod Fish Cakes

this precipe is a good basic recipe, but i find it was too wet, so i added some bread crumbs. i find it tastes like hashbrowns and scrambled eggs, so i eat it with ketchup. i find even when i add my own spices it's still lacking on flavor, but my family likes it so i make it every so often.

Orange Juice Chicken

i've made this recipe several times, and love it. my dad is the most pickey man on earth and i made it for him one night and he even liked it! i always know if its a great recipe if he likes it! you dont have to be precise on the ingredients though, just spread it all on lightly. i didnt give it 5 stars just because its quite a different taste, sweet, but tangy...it may confuse you when you first taste it.

Speedy Homemade Salsa

this was a great recipe and had lots of flavor. i like my salsa chunkier though so next time im going to just chop it a little finer and mix it all in a bowl. i found it just a little too mild for my taste so i added a bit more purple onion and 1/2 an extra jalapeno pepper and it was nice and spicy! i also excluded the cilantro because my sister is allergic and it didnt make any difference

Chunky Tomato Potato Soup

this recipe was delicious and easy to make. i added some cream instead of milk to add a bit more thickness and dilluted the broth a bit for less sodium. i had to simmer the soup a bit longer for the potatoes. the seasoning was nearly perfect, i might add a touch more next time. but overall, this is a very good recipe for cooking beginners or advanced cooks who want to experiment! my family is extremely picky and they couldnt get enough of it! will definitly be making again very soon!
