Apple Walnut Squares

This was a big hit with the family. I had to make a few changes as I didn't have some of the ingredients. I used butter in place of shortening, pecans in place of walnuts, and cooked apples (consistency of pie filling). I also added extra cinnamon and vanilla to the batter, folded in the cooked apples and because of the extra moisture increased the baking time to 40 mins. It turned out perfect.

PHILADELPHIA Peaches 'N Cream No-Bake Cheesecake

I took this to a dinner party the other night and it was a huge hit. Because of the time of year I had to use peaches I had canned (from my tree). I also topped it off with fresh blueberries sprinkled with icing sugar. It was so fresh and a nice treat for the winter!

Marinated Greek Chicken Kabobs

Delicious...I didn't have the basil/sundried tomato feta so used the garlic/herb feta instead and used fresh rosemary in place of dried. Great flavour. Served this with Greek potatoes and grilled vegetables. Everyone raved about it.

Jenny's Lime Glazed Chicken

My family really enjoyed this and it was very quick and easy. I did alter the recipe as I thought that 2C of Mayo was too much. I cut the amount in half and also reduced the parmesan (still left plenty to cover the chicken) I also added a thin layer of bread crumbs and topped with fresh Cilantro which gave the chicken a nice crust. Definitely will make this again.
