Fast and Friendly Meatballs

Super easy and tasty. I used italian seasoned ground turkey, though next time regular ground turkey might be better since it was almost a little too overwhelming on the italian seasoning for my tastes. Added a clove of minced garlic, two slices of chopped onion, and approx three tablespoons of parm cheese. Kept them in a little longer after turning them around, maybe ten mins instead of five. Very good!

Mushroom Chicken Parmesan

I took the suggestions from below and used half and half as well as added pepper, salt, garlic powder, and herbs du provence to the flour, but it still seemed fairly basic and not exactly bursting with flavor. It's fine for your average meal I guess, but I don't think I'll be making it again.

Colorful Chicken Casserole

After reading the suggestions, I decided to add a yellow squash and some thyme and rosemary, which definitely added to the flavor. I also needed more broth than it called for in order to make sure there was enough for the pasta to absorb. Ended up using 4 cups of low-sodium broth, but probably only needed 3. Next time, I'll put the cheese on the top only for the last ten mins when it's uncovered, since it all pretty much melted through to the bottom by the time it was done. And there will be a next time! yum.

Blueberry Party Salad

To be fair, I tried making this a "healthier" dessert by using sugar free jello, fat free half-and-half, fat free cream cheese, and fresh blueberries instead of the pie filling. I still liked it but my friends said it was really "jello-y" and one also said it might taste less "curdy" if I had used regular cream cheese. It's just that the jello v. cream cheese consistency didn't really work for most. Probably right, although I do think it's a decent "healthier" dessert. Gave it 3 stars instead of 2 since it's my fault I changed the recipe so much.

Baked Salmon

My husband and I loved this dish. A light, summery, healthy meal! I used fresh mushrooms and baked for 20 minutes, checked on it, and then put it back in for another 10. Serving size was really only for 2 people - we didn't have any leftovers. Will definitely make it again!
