Mushroom Pork Chops
I have been making this for 40 years! Have not made it in a while, though. Basically the same only I add thickly sliced carrots and use either golden mushroom soup, pork or beef canned gravy. The golden mushroom soup or one of the gravies give a deeper color and richer taste than cream of mushroom soup. It's a nice cold weather standby recipe. Good with buttered wide noodles, rice or mashed potatoes. If you add the carrots, you have the vegetable already. The carrots cooked in the onion gravy mixture are very good. Thank you for posting and reminding me of this oldie, but goodie! ;)

Roasted Rack of Lamb
I love to cook, somehow, I never made a rack of lamb. Always opted for lamb chops or lamb steak. It was time to give it go. I used this recipe. Made a slight adjustment, only because my husband and I are low carb eaters. I simply subbed the 1/2 cup of bread cups to 1/4 c of Almond meal. Figured the Almond meal was more finely ground, so I used less. Kept everything else the same, except the pre-seasoning salt and pepper, Did not measure just liberally seasoned. It was fantastic!!!! Loved it, and it was low carb to boot! Thank you so much! I am adding this to one of our often made meals. Thanks Jennine!!!! :)) P.S. Bought the Frenched 8 bone Rack of lamb at Trader Joe's.

Portobello Mushroom Burgers
I have been making these for a few years and eat low carb. Just leave out the the bun. :) I have used my grill, but my cast iron skillet also works great. I buy the large portobello mushrooms season and sometimes marinate it, slide a nice grilled burger, some Swiss cheese (I like the way Swiss melts), tomato sometimes on top. It's the same idea/recipe only no bun and eat it with a fork. If want a delicious burger, this is it. Yum!
