To Die For Blueberry Muffins

I doubled the batch and got 14 large muffins. :D I did half the batch just as written and they turned out fantastic! Moist and delicious! The other half of the batter... I added some cinnamon, nutmeg, cloves, vanilla extract and cloves. Those half turned out even better! This is a definite winner!

I didn't have shortening, so I used all butter. Besides that, I followed the recipe exactly. It was DELICIOUS! These will definitely be a regular. (I only cooked mine for 6 minutes and they turned out perfectly.)

Quick and Easy Tuna Casserole

This was super! =D I followed the recipe as much as I could. I didn't have tuna, so I used canned chicken instead. I also don't keep processed cheese on hand, so I used shredded sharp cheddar. I sauteed the onions with the peas, mixed in the cans of cream of mushroom soup and a can of milk because it was too thick without it. I also baked it because I like the crunchy, melty top you get when you add cheese on top. I will definitely be using this recipe again and again! Yummo!

Pumpkin Cookies II

These are fantastic cookies. =) I added chocolate chips and doubled the spices. I used cream cheese frosting to make little cookie sammies. Yum! :D

I cut the recipe in half but didn't change anything besides that. It's amazing! The best frosting I've ever tasted. :D I used it to make pumpkin cookie sammies. So good.

Mom's Pretzels

I followed the recipe mostly. :) I didn't make the pretzel shape. Instead I made them into a bagel shape. :D I had to really butter the pan when I baked them so they would stop sticking. I cooked them for 6 minutes, flipped them, cooked 6 more minutes. Turned out perfect. :D

Donut Muffins

AMAZING. I love these muffins! SO easy to make and super tasty! Mine didn't turn out bland at all! I didn't use nutmeg, though. I used cinnamon instead. Doubled the recipe and got 16 decent sized muffins. I will be making these again.. and again. Maybe next time I'll play around with it a little bit (like adding choco chips and vanilla extract). Thanks so much for the superb recipe!

Chocolate Scotcheroos

AMAZING. I didn't have any chocolate chips and the store was closed, but I decided to make them anyways! I used Cocoa Crispy Rice cereal (it's all I had) instead of regular Rice Crispy Cereal. And I added a little extra peanut butter. I stuck them in the ice box for about 30 minutes and then cut them. They are so soft and chewy! SUPER yum! I can't wait to try them when I have some chocolate chips in the house!

Creme Filling I

Mine turned out great. I did make some changes, though. I used butter instead of shortening. I only added half a cup of butter. I used 2 cups of confectioners' sugar instead of white sugar. I also added a half of a tablespoon of vanilla extract, a dash of cinnamon and 3 tablespoons of cocoa powder. I whipped it all together and stuck it in the refrigerator to set up. It turned out fantastic! My fiance LOVES it and if I'm not careful he'll eat it all.

I made these this morning for my fiance for work. They turned out a little dry. I'm sure it's because I didn't add the brown sugar. Is there anything low calorie I can add that will moisten them a bit?

Creamy Au Gratin Potatoes

These are the best potatoes I've ever had. We added a lot more cheese, though. We doubled it, I think. And added some of that amount to the top. We let it cook uncovered for the last 20 minutes and it was perfect!

Chocolate Oil Cake

VERY dense. VERY good. We added melted chocolate chips to the batter and had to cook it longer to get the middle to finish cooking. By the time it was done, the edges were very crispy. The homemade chocolate butter cream frosting helped soften it up, though. :D We used 9x13 and it was the perfect size!
