Maja Blanca (Coconut Pudding)

I have never made maja blanca before and have no idea what the basic ingredients are except for coconut milk. So when I first saw this ingredient, I tried it out and it tasted so good - except it was not creamy enough for my taste. I know for a fact that substituting milk for a dessert yields to a creamier dessert so I used these substitutions from the base ingredients: 3/4 cup milk instead of water, 1/2 cup condensed milk instead of sugar, 1/2 cup of coconut milk to dissolve the cornstarch instead of water. I also used fresh adult coconuts, or niyog. Milked it first with 1 cup of tepid water for every 2 cups of coconut meat to make the "latik" and then 1 cup tepid water for every cup of coconut meat for the base of the maja blanca. It came out creamy but not overpowerly sweet. Added freshly grated meat of young coconuts and corn kernels to break the milky taste. INCREDIBLY GOOD!

Good Old Fashioned Pancakes

This was FANTASTIC. Followed the recipe exactly as written (otherwise, I won't be reviewing the recipe but the modification which is quite unfair) and the pancakes turned out light, fluffy, and very yummy. I used a 1/2 cup scoop and I got 6 pancakes. Make sure you do sift the dry ingredients to get fluffy pancakes. I sifted twice. This is also a perfect base to add on more yumminess - think blueberries, apricots, chocolates, bananas, strawberries, raspberries, ahhhhhhhh stop!!! I don't know about you but I had 1 1/2 and I was full to the brim. My boyfriend, on the otherhand, gobbled up almost three pancakes. Someone needs to go jogging tonight, I think. Thanks for the recipe. A definite keeper.

Banana Muffins II

Absolutely loved this recipe! I reduced the amount of sugar since I added chocolate chunks. They browned really nicely and tasted perfectly. Definitely a keeper!

Mini Cheesecakes III

The recipe is very easy. I had to reduce the amount of lemon juice and forget about the lemon zest since I really do not want a lemony cheesecake. They crack a little when overbaked so you should make sure that you watch them closely or you could also use a waterbath. loved them!

Cowboy Oatmeal Cookies

Followed the basic ingredients but did not use butterscotch chips since I do not have them on hand. What I did, though, is use white chocolate chip chunks and sliced fresh strawberries. The smell from the oven is just unbelievable and the cookies are the perfect crunchy yet chewy ones. When storing, make sure you put it in an airtight container or Ziploc and add a slice of bread to keep the moisture out as it crumbles when not stored properly. Made this three times in one week and family seems to never get tired of it.

The Best Unbaked Cherry Cheesecake Ever

This is a fantastic recipe! Made it for New Year 2011 and made it again after 2 days. We just can't get enough of it! However, I did not follow the measurements exactly as I live in Europe where cups are not common at all. We use dl here. Here is the measurements I made to fit a 9" round springform pan (just the filling): 450g cream cheese 1 dl powdered sugar 1 dl vanilla sugar 2.2 dl heavy cream fresh strawberries to top it It was a definite hit! We all loved it and the kids kept coming back for more! Will do again!
