Emily's Famous Hash Browns

this is now the only way i will make hash browns! i can't believe i've been messing around with just grated potatoes for so long. absolutely delicious. i also added a few sausage crumbles, diced tomatos, and when i flipped them, cheese on top.

Amazingly Easy Irish Soda Bread

I loved this so much. Huge hit at the St. Patrick's Day pot luck. It's a little sweeter than soda breads I've had in the past, but I thought that just made it better. Didn't change a thing and it came out perfect. Cook time was 50 minutes with checking every 5 minutes the last 20 minutes. Maybe next time I will add a half cup or so of raisins too!

Green Bean Casserole I

Made according to recipe except substituted crispy onions on top instead of stuffing, but I bet stuffing would be great. Next time, I will completely omit the sugar and add a lot of black pepper. Way to sweet for me and my guests.

Addictive Sesame Chicken

Absolutely perfect! Completely satisfied my craving for take-out sesame chicken, but it was even better. The only substitutions I made were for lack of listed ingredients: red wine instead of sherry and red pepper flakes instead of red chile paste. Otherwise, I followed the instructions to the T and it came out amazing. The family couldn't believe I made it in less than 30 minutes!

Roasted New Red Potatoes

Really, just the perfect way to cook potatoes for a side. The right amount of spices, cook time, and crunch! Wouldn't change a thing. Well, maybe more garlic, but I could put more garlic on anything.

Italian Bread Bowls

As a bowl, this worked great. And it came out looking just beautiful. The taste, however, left something to be desired. I even followed a few reviewers' advice by adding 1 Tbsp sugar with the yeast, using olive oil instead of vegetable, and sprinkling herbs onto the last egg wash. But this bread needs a lot more. Probably double the salt, definitely some garlic powder, and maybe something else. The bread itself was just very boring which was a shame since it looked so beautiful and everyone was impressed by soup in bread bowls. Will try again adding more salt and garlic powder.

Roasted Pork Loin

I'd give the end product 5 starts, but the recipe itself only 4 because I would have liked more direction on the salt and pepper. It's hard to know what "salt and pepper to taste" is when the meat is raw. What is a normal range of salt and pepper for this recipe? I ended up with about 1 tsp of salt and the same in freshly ground pepper. Everything came out amazingly delicious. I also baked for 45 minutes at 375 and pulled it out when it got to 155. It came up to 160 as it rested.

Honey-Balsamic Vinaigrette

Friends rave about this dressing. They always ask me to make "that amazing honey balsamic." My favorite is a spinach salad with goat cheese, dried cranberries, and pecans, but it goes great with everything!

Absolutely Fabulous Greek/House Dressing

wow. wow. wow. I really enjoyed this. Made it up quick to dress up a simple mixed leaf salad with red bell peppers, used white wine vinegar instead of red, and it just blew my mind! The BF reacted the same as me: wow. wow. wow. Can't wait to make it with the red wine dressing. I am sure it is amazing!

Broccoli with Lemon Butter Sauce

I wanted something a little different for a nicer dinner of filet mignon and potatoes with caramelized onions. This was PERFECT! The butter, of course, made the broccoli so savory and the little bit of cayenne gave it just the best flavor. Not spicy at all. I will definitely be making this again with no changes.
