Cha Cha's White Chicken Chili

I love spicy food so I thought this was awesome! I added extra cayenne and used red peppers and green chiles in addition to jalepenos. I topped each bowl with pepperjack cheese. I didn't wanted to add the cheese to the entire pot because I knew we'd have leftovers.

Pork Tenderloin with Pineapple Salsa

I have made this twice now. Everyone has loved it. My husband and I could live on the salsa. It's such a great combo of fresh ingredients. I served it over rice and it was great that way.

Banana Upside-Down Cake

Very moist and yummy. I didn't have banana cake mix so I used yellow cake and it was just as good, I'm sure. Also added cinnamon to the cake mix. Cooked about 30 min. in one 9x13 pan.

Double Layer Pumpkin Cheesecake

This was a huge hit at Thanksgiving. It was easy to make and delicious. I garnished it with cool whip, caramel, and pecans so that it looked as good as it tasted.

Broccoli, Rice, Cheese, and Chicken Casserole

I used fresh broccoli and steamed it and I used rotisserie chicken instead of canned. It was pretty good but I think it needs more spices... maybe some cayenne so that it isn't so bland.

The juxtaposition of spicy and sweet is perfect (however, I like my food a lot spicier so I added quite a bit of cayenne). I could eat my weight in this stuff!

I made these for my boyfriend for Valentines Day. They are his fave. He says that the texture is the best he's ever had... so chewy and leaves such an awesome aftertaste in your mouth.
