Pineapple and Pistachio Pudding

LOVED this fluffy dessert! It is also very forgiving because I took the liberty of using a large can of pineapple, only vanilla yogurt and the whole tub of lite whipped topping. It was amazing! My hubby won't eat anything green, so I may try another pudding flavor next time, but I really enjoyed it. It kept well in the fridge for about five days. Great, easy dessert!

Chocolate Cornstarch Pudding

This reminds me of pudding my grandmother would make when I was a kid! Only she put way more butter in it and we would eat it over biscuits while it was hot. She called it Chocolate Gravy. A very nostalgic recipe. I have a McCormick's Cocoa Chili spice that I added the second time and it added a little more of a modern edge to it. This is a great, inexpensive, tasty desert!

Asian Lettuce Wraps

Now that I have the specialty ingredients for this dish, I will be making it regularly! I made it with lean ground turkey and my husband couldn't even tell because the hoisin sauce makes it look like beef! Even omitting the onion and using onion powder and using powdered ginger instead of pickled didn't diminish the tastiness of this recipe. Yum!

Key Lime Pie VII

OMG was this good! I used 2 cans sweetened, condensed milk and left out the zest, but I really don't think it could have been better with it! What a simple, perfect recipe. We got a little anxious and ate some after only about 45 mins in the fridge. It was good then, but the next day after completely setting up - PERFECT! Thanks for the recipe! Making this again tonight for my monthly Girls' Dinner Club tomorrow!

Actually Delicious Turkey Burgers

Not sure why I never thought to add an egg before, but...thanks for the recipe! Thought this was really good and moist even with using very lean turkey. I did add some Worstershire and a bit of Soy Sauce and a whole egg, but the recipe was great!

Chicken Cordon Bleu I

Made this for dinner last night and it was a nice addition to my chicken repertoire. I used low sodium ham and swiss to healthify a bit. I also browned it in a skillet on top of the stove first, using just a tiny bit of olive oil and very small amount of Italian bread crumbs for a bit of crust. Then finished it in the oven. It was very moist and flavorful and really didn't take that long at all. Served it with Mushroom Parmesan Cous Cous. Thanks, Kiersten, for a great, easy dinner idea!

Ocean Spray® Oatmeal Cranberry White Chocolate Chunk Cookies

I have been making these cookies for years (found the recipe on the Ocean Spray website) and I think they are the BEST cookies ever! I love the tartness of the Craisins along with the white chocolate. So good!

Oatmeal Raisin Cookies VI

My boyfriend was craving Oatmeal Raisin Cookies, so off to Allrecipes.com I went...this recipe seemed to be a little healthier with less sugar, so I decided to go with it. I have to say that as I was adding the 2 tsp of vanilla, I thought it was too much - and it was. The cookies smelled incredibly sweet because of the vanilla, but they were not very sweet at all. Granted, I was going for less sugar, but it is a cookie and you still want it to taste like one, right? I think with half the vanilla and maybe another 1/2 c brown sugar, they would be good, but we found them to be just OK. I also forgot to add the salt, as recommended by another reviewer, so I'm sure that didn't help. Sorry, Kathleen!

Taco Turkey Wraps

This was an easy, fast recipe that didn't require too many ingredients. Based on other reviews, I only used 1 Tbs taco seasoning (low sodium version). Also, used whole wheat wraps and added some greens for a little crunch. I made some for lunch the next day. I was a little afraid that they would be soggy, but they weren't. Great quick dinner, or easy plan-ahead lunch.

Easy Meatloaf

My boyfriend and I both really enjoyed this meatloaf! I made it the first time about two weeks ago and was craving it again tonight! I made the following adjustments: I used onion powder instead of fresh onions, Italian bread crumbs instead of regular and for the topping, I only used one tbs of brown sugar and mustard instead of two. It was a little too tangy/sweet for me the first time. Also, I made it in a mini-loaf pan which cuts the cooking time by about 15-20 minutes and makes it easy to pack leftovers for lunch the nexdt day. This is a very easy recipe using very common ingredients that I will certainly keep in the dinner rotation.

Prize Winning Baby Back Ribs

Made this over Memorial Day weekend and ended up having to bake them in the oven as another reviewer recommended due to threat of rain. I actually only used the dry rub and didn't add the wet sauce because the rub smelled so good. They were falling off the bone and tasted fantastic! Can't wait to try them on the grill!
