Easy Decadent Truffles

Easy, yes. But toothachingly sweet, even with reducing the sugar to 2 cups. Will keep looking for a truffle recipe.

Fettuccine Alfredo V

Taste was good, but sauce was runny and gloppy. I did use quality parmesan cheese. Sauce was light yellow because I used a free-range organic egg yolk that was very orange in colour. Will keep looking for a fettucine alfredo recipe.

All American Apple Pie

My family said this was the best apple pie I had ever made. The crust is quick and flaky. It is almost identical to the No Roll Crust II recipe on this site. The slight changes I made were reducing the sugar added to the apples to 1/2 cup, and halving the amount of topping for which I used brown sugar instead of white. I sliced the apples very thinly and baked the pie just over an hour. I did not have a problem with the apples being cooked. I may try an oatmeal based streusal topping next time to make it a little healthier.

Blueberry Oat Muffins

These were very good muffins! I used frozen berries. I liked the texture; they were a bit denser than a regular muffin. The oats give a bit of a nutty flavor and a little chewiness. They had the perfect amount of sweetness. The cinnamon/sugar topping is deliciously crispy when the muffins are right out of the oven, but won't stay that way if you store the muffins in a container. These muffins are very satisfying and a little healthier than a standard muffin. I would definitely make these again.

Baklava

Excellent. So delicious I had to make another one a few days after finishing the first one. I make the syrup first and let it cook while I assemble everything. The first time I had funny shaped little scraps of phyllo because of the way I trimmed the dough. I used them to piecemeal several layers and no one could tell the difference. The next time I trimmed the dough properly and had nice sheets for the baklava, which made things easier. The first time I used only 1/2 a cup of butter for the whole pan and baked at 350. It was browned and crispy. The second time, I baked at 325 and used the full 1 cup of butter. A few of the phyllo layers didn't seem cooked and the whole thing was not as crisp. I also tried using 1x the recipe for the syrup and 1.5 times as someone else suggested. It was too sweet with the extra syrup, but just right with the written amount. I will definitely be making this again! This recipe is not difficult, even though it does take time. I've found making a baklava to actually be quite therapeutic! Thanks.

My Amish Friend's Caramel Corn

This was super easy and tasty. I mixed the corn and caramel in a big paper bag as another reviewed suggested. I lined my 3 pans with parchment paper, which I don't suggest because it kept moving around when I tried to stir the popcorn. I added one tin of cashews to my recipe and it was a hit!

Fruity Couscous Salad

This an easy recipe to make ahead for a potluck or buffet. It did turn out a bit dry, so I added a little to moisten. You could probably add some fresh squeezed orange juice to moisten as well. I added in some ground cinnamon and I would suggest cutting down on the scallions so the onion flavor isn't as strong. Overall, this is an easy, fast, and healthly salad to make esp. if you use whole wheat couscous. It is very pretty and the textures interplay well.

Oatmeal Apple Muffins

I used spelt flour in this recipe. We liked the muffins, it was kind of like eating apple crisp in muffin-form due to the texture and spices. Next time I will grate the apple to see if the helps with moisture - mine were a bit dry. This is a very healthy recipe and I was pleased with the results. If you are looking for super moist, sweet, light and fluffy muffins you should go with a full fat version made with refined flour.

No Bake Cheesecake I

This is a delicious dessert and a favorite at family gatherings. I make a bigger cake by using a 10" springform pan, and doubling the filling. I also use an oreo cookie crumb crust, which goes really well with this easy cheesecake.

Winter Fruit Salad with Lemon Poppyseed Dressing

This was very popular at our family dinner. The combination was different and tasty, but next time I will cut down on the sugar for the dressing. It was a little too sweet. *UPDATE* I have tried this recipe with swiss, cheddar, and parmesan...and I think it is best without any cheese at all. To save time, I will often use bottled lemon poppyseed dressing and prewashed organic greens. I also use what ever nuts I have on hand but I like slivered (not sliced) almonds the best. This salad is ALWAYS eaten all up at church potlucks.

Chicken Satay

Very flavorful. I thawed the chicken breasts in the marinade overnight (omitted hot pepper sauce)and broiled the skewers for about 5 minutes. This has become a family favorite. My 3 yr old loves to eat the meat holding both end of the skewer, corn-on-the-cob style.

Cabbage Roll Casserole

This was very good!! It is so quick to make with coleslaw mix. I added fresh garlic, brown sugar, oregano and a can of tomato soup along with the tomato paste. It was flavorful and much enjoyed. Will definately make this again!

Angie's Dad's Best Cabbage Coleslaw

This coleslaw is a bit oily. The red onion is a must, however it leaves quite a strong onion aftertaste. I would recommend using a food processor or buying the packaged coleslaw mix. I have made this several times over the years for large gatherings, but I am dropping it out of my repertoire because there is always so much left over.

Honey Glazed Ham
