Pesto Tofu Pasta

I've been looking for a low-carb, relatively low-fat, protein dish and here it is! I must admit, however, that what I made may not be very close to the original because I had to make alterations to lower the fat and especially the salt. Since the pesto mix counted for 400mg sodium per tablespoon, I decided to adapt it (only I didn't pay attention to the seasonings in it). This is what I did: instead of the mix, I used about 3/4 of a 5.5oz jar basil in water, 1/4 cup ground pine nuts, 1 cup skim milk, 2 large cloves of garlic, minced, 1 T. olive oil, 1T. corn starch in the hopes of thickening the sauce, and put all 1/4 c. Parmesan cheese into to sauce. I left extra Parmesan cheese out for family members to sprinkle on top. Everything turned out well except for the thin sauce but perhaps I could heat it before adding it to the mushrooms, tofu, and olives. I'm going to continue to "play" with this recipe using different milk, seasonings, etc. but will definitely make it again and again. (No one even noticed the tofu and since I didn't say it was in the meal, everyone was happy!) Thanks, Veronica!

Chocolate Chip Pie I

SOOO good and SOOO easy! Smaller than average slices are enough but who would really want to stop there? Once again, I didn't have all the ingredients I thought I did and made the following substitutions: maple extract for the vanilla and 1/4 c. butterscotch chips for 1/4 c. of the chocolate. Can't wait to try it with the original ingredients and ice cream!

Insanely Easy Vegetarian Chili

Great! I added more kidney beans and then more chili powder to a third of the recipe. I personally liked the sweeter, original version. I also used two smaller cans of chopped (diced) tomatoes. One had chilis in it which also changed the taste but I won't know how much until I try the recipe again the way it was written! This could also be a great soup as part of a larger meal!

Taste of Home's Morning Glory Muffins

Really sweet, interesting, good! Very moist! A different taste in every bite! They did not really rise as I'd expected but I don't find that a problem at all as the texture was fine. Maybe it's something I did or the quality of baking soda but I will be making these often even if nothing changes. A 1/4 cup measure is just right for 3" muffins (24).

Southwestern Cauliflower and Ham Soup

I found this quite good and very well-received by those who liked a little spice. It was easy, especially with a hand blender which I used to blend all the cauliflower. I used a little more than the recipe called for and the flavor came through, mixing well with the ham, cheese and pepper (the strongest flavor but not the first one noticed. I will definitely make it again! I may try adding potatoes for a heartier soup and perhaps experiment with other seasonings to add body. I think that the kind of ham used and how it was cooked will also change the flavor a bit.

Curried Ham Popover Pie

I thought this recipe was great, but I must confess what I cooked was not exactly the original recipe. I loved the idea of a popover topping. What I ended up with was the original plus some cooked potatoes, frozen carrots and about a cup of frozen stew vegetables. As for the batter, I didn't have curry as I'd thought, so substituted dry mustard and chives. It still could have had more flavor but I will be happy to keep trying by adjusting the amounts and trying new ingredients (maybe in place of the potatoes). Thanks, Roxanne, for a great, basic recipe I promise to try your way one of these meals. I'm sure it will have more flavor but I just felt I had to try more than onions and peppers the first time around!

Winter Fruit Salad with Lemon Poppyseed Dressing

This was absolutely delicious! I had to substitute a shredded cheddar/Montery Jack cheese combination for the Swiss but everything else was the same. I LOVED the salad dressing though I only used 3/4 of it even with extra lettuce. That just left me with more for another time! I put all the ingredients together (except the poppy seeds) in a large bowl and blended them with a hand bleder, then added the seeds and blended a little more. The dressing was so well mixed and didn't separate, much as I suspect would happen with a table-mounted blender- just less mess and steps! Thank you Nora for a recipe I could eat all day!

Nutty Sweethearts

This turned out surprisingly good even though it is truly geared to someone with a big sweet tooth. I thought the white chocolate would be too much but well-blended, it's not. Had to substitute for the candied cherries half the amount of dried, sweetened cranberries and chunks of semi-sweet chocolate for the morsels. I was a little unsure of the directions, so did what I've done with Rice Krispy Treats - I placed the mixture in a well-oiled one-cup funnel to make "kisses". It makes exactly four. They hardened at room temperature at which point I could wrap them in cellophane and tie with a ribbon. I may try this recipe with all the ingredients except the white chocolate and according to the recipe for Rice Krispy Treats but I will certainly make this one again as it is written! The only trouble I had was with melting the white chocolate. I used the microwave and perhaps this was the problem? Even though the chocolate got a little dry and wouldn't pour, I could mix it into the other ingredients by hand.

Champagne Salad

A hit with most everyone! I followed the suggestion to cut the sugar to 3/4 and then used neufchatel (low-fat cream cheese)and frozen raspberries undrained. I accidentally purchased only 8 oz. whipped topping (lite).I don't know yet how the original recipe would taste, but it looks like this one lends itself well to modifications!

Real N'awlins Muffuletta

This was truly impressive in taste and presentation! Most people raved about it though the olive salad didn't suit a few of the others who wouldn't have liked it on anything else anyway. I was fortunate enough to get the round loaves made fresh the morning I needed them from the Italian grocery where I could purchase everything else. DEEELICIOUS! I read in the reference section that the original and best mortadella can be purchased only in Italy. Has anyone found this to have changed?

Nice change of pace! I can modify the amounts of ingredients to suit everyone (it is a bit heavy on the mustard, overwhelming other flavors) though everyone liked it from the first. So simple and effective!

Florentine Artichoke Dip

Great recipe! We liked it both cooked and uncooked(after setting a while to blend ingredients and flavors). It can become rather stiff and may benefit from a little olive oil or water when that happens.
