Kielbasa and Veggies

This recipe inspired me to make the following changes, which all turned out great! Instead of frozen vegetables, I chopped fresh carrots, parsnips, onion and green beans. I added a few more potatoes than is called for, and increased the butter accordingly. I drizzled some olive oil before baking. I also kept in for an additional 10 minutes to get the veggies a bit more done. We don't like them aldente. Very easy, even with all this prep!

Oatmeal Waffles

I've tried these a few times. They turned out best when I used Canola oil in place of the butter. The trouble with the butter is that you MUST insure that the milk and egg mixture is at room temp or warm before adding the melted butter. if not, the butter hardens because it comes in contact with the cold milk/eggs. I would simply use oil instead.

Brooklyn Girl's Penne Arrabiata

This one didn't turn out for us. I must have done something wrong, as my chicken lost it's coating and was not crisp after simmering in the sauce. It's possible I didn't fry the chicken long enough. The sauce tasted good...but I will amend the recipe if I make again so that chicken goes in last to retain crispy texture.

Crackle Top Molasses Cookies

These cookies taste and look much like ones you might buy in the supermarket! I formed my cookies using a cookie scoop, which produced cookies that spread pretty thin, but were still good. next time, I will form smaller cookie balls before baking.

Mom's Zucchini Bread

I can see why this recipe was rated so highly! What a moist and scrumptious bread! When mixing the wet and dry ingredients, I noticed that the mixture was very thick...like cookie dough. Concerning...but upon adding the shredded zucchini it loosened to a more recognizable consistency for baked breads of this kind. I had a slice 20 minutes out of the oven, and it is yummmy warm! Thank you much!

Chicken Stew with Dumplings

This stew was delicious. My husband would like to give it six stars...but that's not possible. I stuck closely to the recipe...adding 3/4 cup more water to the broth after adding vegetables. I tried cream in the dumplings initially. The prescribed amount was not enough and the dough was much too crumbly.I added another 1/4 cup milk, which brought the dough to thick wet consistency that seemed appropriate. It turned out great! It tastes so fresh...and without the overwhelming sodium taste you get with canned or restaurant chicken soup. We used frozen peas and carrott medley, rather than fresh carrotts. That worked well, and was a bit less work. The left overs had soaked up much of the broth, and were very thick.

Quick and Easy Alfredo Sauce

Err...This sauce was amazing. My husband wanted to lick the pan! We made a couple of revisions, based upon what we had on hand. I used grated cotija cheese, instead of parmesan. It is the same consistency, but with a mexican flare. Could not taste the spice in the sauce. Also used half and half instead of milk. I was a bit worried that the butter and cream cheese would not incorporate, but adding the half and half a bit at a time helped to quicken that process. The sauce was very good, but doesn't look as appetizing as I'd like. (It's very "white") Next time, I'll try adding some parsley or some other fresh herb to make it more pleasing to eye. Sauce thickens nicely after being removed from heat. Thanks for the recipe!

Black Hills Golden Egg Bake

Delicious! I omitted the green pepper and threw some onions in the butter and onion mixture for a little extra flavor. This worked well. I think I may 25 minutes may have been a tad too long. Next time I might check it at 20 minutes for done-ness. Outstanding! Thanks!

Peanut Butter Chocolate Chip Cookies

I made this recipe as written, except that I put in less chocolate chips...using miniature chips. The cookies turned out with a very good, crisp outside/chewy inside consistency. They looked very good, but they were simply not sweet enough for us. I don't believe that there is enough sugar in the recipe. Wish I could say otherwise! I had high hopes...but just are not appetizing. Wonder what I did wrong???

Shrimp Lemon Pepper Linguini

This was a sensational recipe! I've made it twice, both times omitting the lemon zest and using dry herbs rather than fresh. I believe that fresh would enhance the flavor, but I had none on hand. The recipe is very low maintenance, as the shrimp cook in only three to five minutes. The sauce is very easy to make, with only a few flavorful ingredients. I suggest this when you want to impress, but have little time to work in the kitchen. Delicious. It will reheat okay in the microwave at a low power.

Sugar Cookies with Buttercream Frosting

DEEEElicious sugar cookie! I didn't make the frosting because I have my own favorite, but the cookie is definitely my new go to favorite. The dough was very easy to "cut", shaped well, and was so moist and delicious, even days later.

These burgers are extremely moist! We didn't make the BBQ sauce...Instead we had mushroom swiss burgers. Good burgers directly off of the grill...but even better when reheat later.

Walnut Pear Coffee Cake

We love this coffee cake! The recipe was difficult to follow. I got confused with all of the "reserved" topping and "reserved" walnuts, but was able to sort it all out half way through the process. I suggest reading the recipe thoroughly, and organizing all ingredients prior to beginning the prep. Preparation is extensive, but it is certainly worth it. The cake is very moist...topping crunchy and buttery. Definitely a "keeper" as my husband says.
