Chocolate Chess Pie II

I went ahead and tried this... at 45 minutes, you have a top crust, but underneath is just tasty chocolate syrup that does NOT set even after cooling. This recipe needs: a) about 30 more minutes OR b) 2 more eggs OR c) about 1/4 cup flour.

Fried Zucchini

This was very bland. The breading did not stick for me either (and I know what I'm doing). Since it didn't work out, I added garlic, Parmesan, and a few Italian spices to the dry mix. I dipped the semi breaded zucchini in a milk/egg mix and then back into the improved dry mix. Much better, but the cornmeal was just not very exciting to me.

Very tasty. I ended up using more cheese. I also covered the dish with foil to keep the moisture in and then cooked it for the last ten minutes without the foil.

Broccoli with Garlic Butter and Cashews

We just had this with dinner and it was amazing! Very tasty and we got rave reviews. We ended up spooning up the leftover sauce (I doubled it) over our salmon and it was a wonderful match.

Amish Cinnamon Bread

This is a great recipe. I've always used a similar one that I received with my starter. To perfect this... mix together 1 tsp cinnamon and 2 tbsp sugar and sprinkle evenly over your three loaves before baking. You get a yummy crust as a result.

Quick and Easy Home Fries

Simple and tasty. I cut my potatoes a bit small and they were done faster, but they were also a bit mushy. They were extra tasty with a dash of garlic powder.

Authentic Mexican Tortillas

Very very very tasty! BUT they are more like a pie crust than a tortilla. To make them right, you'd need to add a whole lot of flour. I'm going to try the other well rated tortilla recipe next time.

Carla's Fruit Dip

Yum. I doubled the recipe for a big outing and we ended up with quite a bit of leftovers. It stays nicely in the fridge for a while. Try it on some waffles or french toast with fresh fruit.

Slow Cooker Mashed Potatoes

These are great. We made them for a holiday dinner. It was nice not having ANOTHER thing on the stove or in the oven. They can be prepared ahead of time and thats a plus. The taste is a much appreciated change from plain old mashed potatoes.

Banana Banana Bread

Very tasty. Adding about a cup of walnuts is the perfect touch. Tip- if your bananas are getting old and you don't feel like making bread right away... throw them in the freezer! They'll turn an ugly color, but they work just great in banana bread.

These are amazing! I only had bread flour on hand and I think they came out with a lighter texture as a result (good in my opinion). I used dried cherries and added about 3/4 cup of chocolate chips. YUM

Pumpkin Apple Streusel Muffins

These are great for breakfast. They also freeze well. I make several large batches at a time. Substituting applesauce for some of the oil (use the same amount) works very well with this recipe and makes it much healthier.

Chicken Enchiladas II

A favorite in our house. I usually omit the chiles and sometimes the onions as well (use a little onion powder). I almost always add more cheese, I just can't resist. I LOVE these and I don't like mexican food.

Garlic Green Beans

I used fresh green beans and had to cook them a long time, but my husband absolutely loved these. Next time I will definitely have to steam my beans for a minute or two first. It works just fine with margarine... just don't add any salt.

WOW. I've never made a snickerdoodle before. This recipe was simple and absolutely perfect. At first I didn't think it would actually make 48 cookies, or that the cinnamon sugar would last long enough. You have to make them somewhat small (like a rounded teaspoon, not tablespoon)... they really expand when cooking. Anyways, its perfect!

Apple Pecan Cornbread Dressing

I had never liked cornbread until I had this last year at Thanksgiving. The ingredients might seem really odd, but it is one AMAZING stuffing. I could eat this stuff plain without all the other stuff you normally eat for the holidays. Its that good.
