Easy Mexican Casserole

This is one of my favorite dishes. I do use ground turkey instead of ground beef, and black beans instead of chili beans. I also chop up a whole big tomato instead of using just half a cup. Love it though, and I make it often.

Chicken Garlic Pizza

I made it exactly like the recipe with the exception of using grape tomatoes instead of plum. I really didn't measure the toppings either, I just put them on until it looked right. Absolutely loved it, it was so yummy...and my one year old ate it right up, she kept asking for more, I will definitely make this again!

Savory Slow Cooker Squash and Apple Dish

This was really good. What a great hearty meal. I made this along with a ground turkey meatloaf, and my one year old ate it right up! I didn't have enough cinnamon on hand so I did add just a little ground cloves to the mix...I think it came out great.

Pan-Fried Mustard Mayonnaise Tilapia

I like that this recipe doesn't use egg....I did not have any spicy brown mustard in the house, so I used Dijon instead...gave it a nice creamy texture. It tasted wonderful.

Vegetable Orzo

I really liked this!! I used Vidalia onion instead of red onion and it came out really well. My one year old even ate it!! If I wanted to use it as a main dish I think that I would load on some more zucchini and carrots though.
