Corn Dog Casserole

I am only giving this 3 starts because I made a lot of changes to the recipe but it turned out really good. First, I omitted the celery and sage. My grocery store carries a mix of frozen onions red and yellow peppers. I sautéed that in a cast iron skillet. Then added a few chopped cherry tomatoes. Removed from the skillet then added the chopped hot dogs to the skillet and browned them. 1 1/2 cups of milk was way more than the 2 packages of corn bread mix called for so I followed the amount on the package. I took the suggestion of another reviewer and added a can of creamed corn. Then I cooked it in the hot cast iron skillet. Yum

Parmesan Spinach Balls

I have made these many times for all kinds of parties, and they always dissapear. People are always asking me for the recipe. My favorite thing about these is that they taste just as good at room tempature so you don't have to worry about keeping them warm. You can also make them ahead of time.

Pan Seared Lemon Tilapia with Parmesan Pasta

I only made the tilapia, and I didn't make it exactly as instructed. I sprinked one side of the tilapia with lemon juice then sprinled the herbes on the fish until covered. Then put the fish herb side down in a non-stick pan and cooked it on med-high heat until there was a little color. While that side was cooking I covered the up side with the herbs. Flipped it over. Then hit it with a little more lemon juice. Only needed to cook for a minute or 2 on that side. Not fussy and so delish.

Green Beans with Cherry Tomatoes

I did as other reviewers suggested and omitted the sugar and garlic salt then added in fresh garlic. This was so good. The tomatoes added just the right amount of sweetness to the green beans to make them different from the norm.

Super Filling Cannellini Bean and Escarole Dish

My grocery store does not carry Escarole. I spoke to the produce manager and he suggested romaine lettuce. So I added it at the end right before I melted the cheese on top. It was de-lish. The romaine gave it a nice crisp texture. Don't forget to add salt and pepper. it really needs it.

Lemon Mustard Chicken

I listened to the reviews that suggested to marinate the chicken for an hour before breading. I also sprayed the top of the chicken with I Can’t Believe It’s Not Butter before turning over. It was de-lish. Like a spicy fried chicken.
