Corn Dog Casserole
I am only giving this 3 starts because I made a lot of changes to the recipe but it turned out really good. First, I omitted the celery and sage. My grocery store carries a mix of frozen onions red and yellow peppers. I sautéed that in a cast iron skillet. Then added a few chopped cherry tomatoes. Removed from the skillet then added the chopped hot dogs to the skillet and browned them. 1 1/2 cups of milk was way more than the 2 packages of corn bread mix called for so I followed the amount on the package. I took the suggestion of another reviewer and added a can of creamed corn. Then I cooked it in the hot cast iron skillet. Yum

Parmesan Spinach Balls
I have made these many times for all kinds of parties, and they always dissapear. People are always asking me for the recipe. My favorite thing about these is that they taste just as good at room tempature so you don't have to worry about keeping them warm. You can also make them ahead of time.

Pan Seared Lemon Tilapia with Parmesan Pasta
I only made the tilapia, and I didn't make it exactly as instructed. I sprinked one side of the tilapia with lemon juice then sprinled the herbes on the fish until covered. Then put the fish herb side down in a non-stick pan and cooked it on med-high heat until there was a little color. While that side was cooking I covered the up side with the herbs. Flipped it over. Then hit it with a little more lemon juice. Only needed to cook for a minute or 2 on that side. Not fussy and so delish.
