Potato Tacos

These were a great vegetarian alternative to beef tacos. I am not a big vegetarian fan but love potatoes. My husband ate about 3 of them while I was cooking them! I put them in toaster oven the next day to warm up the leftovers and they tasted like I just made them.

Raspberry White Chocolate Mousse

I made this for a dinner party the other night and placed it inside chocolate shell cups then I topped it with raspberries and blackberries. I also drizzled some of the raspberry sauce on the plate for decoration....my guests went nuts for it and have told everyone about it!

Laurie's Tequila Marinade

This was an amazing marinade. It was just spicy enough and the tequila gave a great kick. The smell when we were cooking it was mouthwatering! I couldn't believe how tender and juicy it made our steaks taste, even the next day after being warmed in the microwave! I will use this again and again. Thanks Laurie.

Tiramisu Cheesecake

Amazing Cheesecake! I made this for a dinner party and even my lactose intollerant friend couldn't help but ask for seconds, and thirds! The only thing I did different was use espresso instead of coffee liqueur and I put 4 tbsp. in the crust and 4 in the cake. Then I sprinkled the top with chocolate shavings, ground cinnamon, coffee dust and icing sugar.

Corny Ham and Potato Scallop

Such an easy and tasty dish! It was a bit dry the first time I made it, my slow cooker seems to run a bit hot so I added a 1/2 cup of water and it came out perfect the second time.

Penne Russo a la Vodka

Wonderful recipe, my husband loved it and my father in law who won't eat anything that has cream in it, asked for seconds! The only thing I did was to use my immersion blender to smooth it out a bit.

Easy Scalloped Potatoes

The first time I made this it did not turn out at all. This time I halved the recipe, put it in a shallow casserole dish (so the milk wouldn't sit on the bottom) and covered it with a lid. After the cheese had melted thoroughly, I stirred it, flattened it out and increased the temperature to 425F. After 30 minutes I removed the lid and baked for another 10 minutes to brown and thicken the sauce a bit. That worked out great.

Broccoli and Stilton Soup

I fell in love with this soup when I went home to England to visit family and have been searching for my own recipe since. I added another cup of chicken stock and halved the cheese, it was perfect.
