Quinoa with Veggies

This was a delicious and very easy to follow recipe. As others have mentioned, quinoa is made in a 1 part quinoa to 2 parts water ratio, so 2 cups of water should be used, not 3. I didn't have any fresh garlic on hand so I used 1 TBS (I may use more next time). We used corn, zucchini, and sweet onion and it was delicious! A very easy and tasty side dish.

Oven Pot Roast

So delicious and easy to make! I added some minced garlic to the soup mixture and cooked at 375 for 2 hrs and 15 mins. I will DEFINITELY be making this again!!

Carla's Fruit Dip

Delicious! I've had it with many different kinds of fruit and found that strawberries and blueberries are perfect. I made my first batch with 1/3 fat cream cheese and light cool whip and thought it was just fine. This last batch I used fat free cream cheese and really can't taste a difference (the only noticeable difference is that it is slightly thicker). I will use fat free cream cheese from now on!!

Baked Potato Casserole

My husband and I made this for Easter dinner and it was fantastic! We did make a few adjustments though: I thought 8 cups of cheese was way too much, so I cut it down to 6. Also, I went ahead and substituted light mayo and light sour cream, despite the warning. Even with these changes, the casserole turned out great, and you couldn't tell that the substitutions were even made! We will definitely make this again, and maybe try turkey bacon instead of regular.

Two Step Creamy Cheesecake

VERY easy recipe that was super yummy! I made this for my husband's birthday, and I substituted low-fat cream cheese and light Cool Whip and couldn't taste a difference. I also followed other reviewers' suggestions and used 8 oz. of Cool Whip instead of the 12 that was called for (I think 8 oz. was perfect-anymore would detract from the cream cheese flavor). I will definitely be making this again!

Zesty Slow Cooker Chicken Barbecue

Fantastic! So easy to make, and absolutely delicious. I used Sweet Baby Ray's Honey BBQ sauce but I think next time we will try a Jack Daniel's flavor. I followed a previous reviewer's suggestion and made a BBQ chicken pizza out of the leftovers with mozarella cheese, basil, and red onions. Yummy!

Dijon-Tarragon Cream Chicken

I doubled the recipe and quadrupled the sauce and thought that it had really good flavoring except it was a little too much dijon. Next time I am going to try half dijon and half honey mustard and see how it turns out! Still, a very yummy (and incredibly simple!) recipe that all of my guests enjoyed.
