J.P.'s Big Daddy Biscuits

Reviewed: Sep. 7, 2013
very easy and delicious. I followed tips from others to make this a bit better such as baking in my pre-heated buttered cast iron skillet for 10 mins at 450; using half cold butter and half cold shortening; also I added vinegar to the milk to make butter milk; I only made half of the recipe and it yielded 4 nice large biscuits I used a pub glass to cut the dough and I tried not to handle too much as other reviewers mentioned. thanks for the recipe and all for the tips

Sopapilla Cheesecake Pie

Reviewed: Dec. 26, 2012
received many compliments! was able to found the crscent baking sheets so i lucked out there. i prebaked the bottom crust for 8 mins in the oven and whipped the cream cheese mixture while that cooled. changes i made: used 3 packs of cream cheese-could have got away with 2-2.5 i thought it was too much cream cheese. i also added 1 egg to the cream cheese mixture. i brushed the butter on the top crust them sprinkled the cinnamon and sugar mixture all over. i didn't use it all bu ti think in the end it could have used a bit more. this recipe is a winner and it can def be tweaked depending on your tastes. everyone loved it will def make again

Monkey Bread I

Reviewed: Oct. 16, 2012
this recipe was wonderful! i was looking for something simple and delicious to make for my bf's family and they were very pleased. he requested me to make it, as we both tried it for the 1st time when we stayed at a bed and breakfast upstate NY. i read several reviews and suggestions before taking this on. i pretty much followed as is, except i made balls instead of cutting the rolls in quarters and i made more of the brown sugar butter sauce and i poured the brown sugar sauce over each layer (there were 2 layers). it may be because i made balls, i made most of the 2nd layer, but didn't complete it. (it didn't make a difference in how the bread came out tho, see pics)next time i will make the balls more uniform in size. i used the honey butter and buttermilk biscuit dough. sprinkled raisins and walnuts on the bottom of the pan and throughout the layers. i used a srping form tube pan, put a baking sheet on the bottom rack while cooking and covered the bottom of my spring form pan with foil to prevent leakage. this method works but its probably easier to purchase a bundt pan. i also used tented foil over the bread for the 1st 20 minutes. i ate a piece fresh out of the oven and it was great but at the time it seamed like it could have used 5 more minutes of cook time but a couple hours later it was just perfect. i guess it depends on your preference and your oven. thanks for the amazing recipe!! one last thing- i had a lot of cinnamon sugar left over i would divide it in half.

Honey Nut Granola

Reviewed: Sep. 27, 2012
this came out great!to make it less calories i did a few changes i halved the recipe. used 2C oats, 1/4C walnuts, 1/4 almonds and a handful of sunflower seeds. i used 2 tbsp of coconut oil(gives awesome flavor) and 2 tbsp honey. i may have cooked mine 5 mins too long bc i didnt think it was brown enough but it came out crunchy with a toasty flavor. i think i would prefer if i made it a lil chewier. have to test that out on the next batch. overall awesome recipe with lots of room for variations with flavors and mixins. thanks! BF loved it too, we have been adding it to our greek yogurt!

Baked Scallops

Reviewed: Sep. 27, 2012
this was delicious! i am sure its awesome as is, however i try to clean my recipes these days to suit my life style. a few slight modifications to make it a touch healthier. i used a 1/4 cup whole wheat seasoned bread crumbs (these have a lot of salt from the seasoning) and only 2 tablespoons of olive oil and to be honest i didn't need that much of either the oil or crumbs. i only needed enough oil to coat the scallops and i might have been able to do that with a tbsp. and for the coating mixture i didn't even use it all as i only wanted a lil breading on the top layer of the bake and the recipe yielded quite a bit even tho i reduced the bread crumbs by half. so next time to make it cleaner i might just only use a tbsp oil and 1-2 tbsp bread crumbs or simply eliminate them if i serve them with a starch such as brown rice or Whole wheat pasta. thanks for the great recipe!

Gary's Turkey Burritos

Reviewed: Sep. 26, 2012
this was awesome. my BF LOVED it and so did i. i used one can of hot tomato sauce (very good and adds flavor but as with all sauces it does contain a lot of salt) and used chopped fresh tomatoes. we try to eat pretty clean so there was no cheese or sour cream. used frozen corn defrosted in cool water (makes no difference i think) whole wheat tortilla from trader joes (yum!) i made my own refried beans in the slow cooker the night before with the "refried beans without the fry" (very easy!) recipe from this website. i did add cumin and chili powder and onion powder per recommendsations of others. thanks for the simple recipe it was fantastic!

Pumpkin Bread

Reviewed: Oct. 26, 2010
this bread was absolutly delicious. i brought a loaf to work and got rave reviews. it was a serendipitous discovery that the recipe yielded 2 loaves, i hadnt noticed that detail when i printed the recipe. anyhow , i followed advice of others by adding 1c glazed walnuts, reducing the cloves, and swapping one cup brown sugar for one cup of white. i also used the pumpkin bar cream cheese icing on the loaves and applied it with a pastry bag. it was not necessary but it made the loaves look very pretty.

Spicy Slow Cooker Black Bean Soup

Reviewed: Feb. 15, 2010
excellent soup. as others have mentioned, i also added canned tomatoes and chilis, extra jalepeno, peppers, onions. it was very much like a chili, delicios. i also did blend 1/2 of the soup in the blender to make it thicker and i boiled the beans in chicken broth after the soak before adding them to the slow cooker. i ate the soup all week as part of the fat smash diet (since you can have meat) i lost 2 pounds in 5 days.
