Simple Beef Pot Roast

I made this for dinner tonight and it is amazing. Even my super picky 5 year old boy loved it. I had less roast and more veges and changed it up just a bit. I cut up 1 medium onion + about 1/2 of another and used most of a big bag of baby carrots. I added 5 or so whole cloves of garlic too. I did not have celery. I followed the recipe, adding the garlic in with the other veges. When it was time to season I added some dryed thyme (instead of rosemary, just didnt have it on hand) (eyeball it), sea salt, pepper, and 1/2 package of onion soup mix. I also added just a pinch of celery seed. Just a tiny pinch did the trick. (Celery seed is a strong spice so be careful). I placed the meat back in the dutch oven and put it in the oven for 30 minutes. Once some gravy had formed (and it will) I cut up 3 potatoes in large chunks with some skin still on. I cooked it until done, checking on it every 30 minutes and carefully stiring some to make sure the potatoes have a change to get down in the gravy. I added some pepper and thyme close to the end. The flavor was amazing but not overwhelming. I am sure the recipe is great as is but I like to change things up and use what i have. This will be replacing my crock pot recipe for roast. It is just as easy as the crock pot and could probably be adapted for the crock.

Chicken Stir-Fry

I just cooked and ate this. As good s take out? HA! Better than any take out I have had. I doubled my seasoning and you definetly need more cornstarch. Be prepared to do some taste tweeking at the end and go easy on the soy sauce. If your taste isn't quite right work with it! I will definetly cook this again!

Garden Veggie Pizza Squares

I love this recipe. When I told my husband and mother what I was making they turned their noses up. Once I put it together though it was gone in the blink of an eye. Everyone loved it. I also included coliflower. Don't leave out the green onions though...they really give it a kick! I used a little over a half a package of the ranch seasoning as we are big ranch lovers here.

Crispy Baked Chicken

The first time I made this I was impressed. The second time I altered the recipe a little. I like a lot of flavor so I doubled the seasoning and subsituted garlic powder for the oregano. I used boneless skinless chicken pieces for chicken nuggets. very tasty and the kids LOVE them!

Suzy's Mashed Red Potatoes

Even my kids loved this one. I made them garlic red mashed potatoes by caramelizing 3 cloves chopped garlic and green onions and adding it to the recipe. You can even boil them in chicken stock for more flavor! They looked great on the table and tasted even better. I plan to make them again soon!

Country Green Beans

These are awesome! I fried up 4 strips of bacon then removed them from the skillet. Tossed in the chopped onions and 2 gloves of garlic (we love garlic). After cooking those until clear I added the chicken stock (instead of water), butter and bacon and topped it off with sea salt and ground pepper. What a great, country cookin' recipe!
