Dijon Crusted Halibut

My husband and I LOVE this halibut recipe. To cut calories/fat, we substitute low-fat mayo and fat-free spray butter, and it still comes out tasty.

Creamy Rice Pudding

Absolutely wonderful! I doubled the recipe and used 2 cups of 1% milk and 1 cup of fat-free half-n-half and it was so rich and creamy. Just delicious.

Apple Raisin French Toast Strata

This recipe is WONDERFUL! I made it for a holiday brunch and everyone raved about it. I made a few small substitutions to decrease the fat and calories ... I used half eggs/half egg beaters, fat free half and half, and low fat cream cheese and it still was rich and delicious. I'll definitely make this one again.

Chocolate Chip Pumpkin Bread

Jamie's Cranberry Spinach Salad

Oh my gosh, this is WONDERFUL! And so very easy. I used Splenda in the dressing, instead of sugar, and I also browned my almonds in fat-free butter and sprinkled them with Splenda to give them a sweet flavor without adding fat, calories or carbs. Delicious!

Field Grade Spaghetti Sauce

I did not care for this sauce. I followed the recipe exactly but I didn't like the flavor while eating it and especially didn't like the after-taste. However, my boyfriend thought it was allright.

Roasted Chicken with Risotto and Caramelized Onions

MMMM ... loved this recipe. I, too, used only 6 cups of chicken broth and added a half pound of sliced mushrooms when sauteeing the onions. Turned out perfect.

Awesome and Easy Creamy Corn Casserole

DELICIOUS! I made this for a dinner party and my guests raved about it, even asked for the recipe. And it's so easy - took only three minutes to prepare. After reading previous reviews, I did add 1/2 teaspoon of salt.
