Turkey Picadillo II

Easy to make and very unique tasting. Be careful if you're not a spicy hot food person. Even 1/2 tsp of cayenne is enough to give a fair bite!! So much that it almost drowned out the other flavors for me. My cayenne was a newly opened spice so maybe it had more heat to it?? I'm feeding this to my toddler later so I think I will have to doctor it a bit as he may not like the ending tingle it leaves in your mouth. I didn't catch the salty/sweet even though I doubled the raisins. I would say start off with 1/4 tsp of cayenne and you can always add more if you want to dose it down with the rest of the wine! :)

Red Lentil Curry

Very delicious and easy dish. I gave it 4 stars because of 2 things. I needed to increase the amount of spice to get a real good flavor and also perhaps I was just cooking to fast or plain old dumb...but the 2 cups of lentils is the total "cooked" amount NOT 2 cups of dry lentils.

Baked Kale Chips

One important tip: never SALT before the oven, it draws in water and makes it soggy and not nice and crisp, so salt as soon as the come out of the oven. Also for a twist add some sesame seed oil with the EVOO. Good tastes!

Slow Cooker Chicken and Dumplings

Kinda blah blah. I wouldn't rate this as high as everyone says. I made the mistake of using low sodium chicken broth instead of water and it was very salty indeed. The dough took waaaay over an hour or more and the "dumplings" were still raw. I get that they should be a little rubber like but this was no good for me, my 16 y/o or my hubby. even tossed in some peas and carrots which did help it, but a generic frozen pot pie is better than this. sorry won't make again.

Beaker's Vegetable Barley Soup

This is a great recipe which can be adjusted pretty easily to what veggies you have in your house! I do agree however that the pepper is FAR TOO MUCH. It can ruin it with an awful bite. I did add extra broth and did a 50/50 of vegetable and beef. Used real roasted garlic, didn't really notice the worchestershire or sugar as taste goes but I put it in there. I also love carrots so I put extra in as well as parsnips. no zucchini so I added a bit of spinach. This was great today for our first measurable snow here in 288 days! My tummy is happy!

Crackle Top Molasses Cookies

Very good and very easy. I did 1/2 sugar 1/2 brown sugar. Even with a bad cold these have a strong yummy taste! I made pretty big cookies and got about 26 cookies out of it. Don't eat the whole batch though!!(TMI) Molasses is a natural laxative...

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Hum. I won't say it's bad, it's ok. It is healthy when you cut out the butter, use a little evoo, and I doubled all the spices and added an extra granny smith apple. I tried it over brown rice and didn't think that did much for it. I tried the greek yogurt and then tried some with feta. I'd say the greek yogurt suits it best. I think this soup definitely needs to meld the flavors for a day. Like I said, I doubled the spice, added some curry, threw in a handful of spinach for extra benefits...and it was ok. We ate it but not sure I'd rave over this one.

Tres Leches (Milk Cake)

This cake was so delicious! I've made it twice now, first time I followed the original recipe~which is fabulous and the 2nd time I added 2/3 cup agave instead of sugar, and 2 TBSP of rum to the cake batter. I also added 2 tsp of godiva liquer to the milk portion. I let it soak and just top each piece with fat free cool whip and sprinkle with cinnamon. Everyone begs for this recipe!

Chicken and Red Bean Enchiladas

I make all sorts of enchiladas varying week by week. This recipe was the best by far! I skipped the pepper jack got a bag of kraft mexican shredded cheese, added a can of mild red enchilada sauce, 8 oz of tom. sauce, some chicken broth and pinto beans. My husband loved it!!!

Jazzy Green Bean Casserole

This was so easy and good even when I ad lib the ingredients! I had no white corn so I used hominy, no cream of mushroom soup, so I used cream of chicken, not enough cheddar, so I used 1/2 mexican blend, no onion flakes, so onion powder~ It was REALLY good! My 15 year old who hates everything even liked it!
