5 stars with modifications! "Mom's" pancake recipe for the family now. DH has a lock on banana pancakes... what the kids call "Dad's Pancakes." Now, I have my own, seperate but equal recipe! I have modified: 1/2 all purpose, 1/2 whole wheat flour; slow cooking oats substituted for quick oats; brown instead of white sugar; 1/2 the amount of baking powder; eliminated baking soda; 1/2 amount of salt; 1% milk w/ splash of cider vinegar; a little less oil in the batter. The oats need to soak for a little while to soften, this also helps to keep the batter from being "thin". I found no need for a food processor and simply hand whisked. While I lessen the oil in the batter, I grease the pan with butter at each application of batter. (That's right, butter! Between whole wheat, reduced fat milk, and reduced sodium something's gotta give). The butter added to the pan adds a nice browning to the edges and imparts a flavor that has no substitute. I simply remove the option to add it at the table. The kids insist on syrup but I love these pancakes with fresh fruit and powdered sugar. The modifications made were based on previous reviews and personal preferences, not on disappointment with the original recipe.
