Pumpkin Upside Down Cake

I had such high hopes for this recipe but it proved to be too sweet for my tastes, which is really saying something! The first bite or two was wonderful but was too much after a big meal (that's a lot of butter). I might try it again with some modifications but would probably include it with lunch offerings, where the richness of the dessert stands out as a treat.

Slow Cooker Cranberry Roast

Fantastic! I love this recipe as is but have also made various substitutions according to what we have on hand. Venison roast was great! apricot preserves & vegetable soup mix, etc. I make it a point to try to keep cranberry sauce in the pantry now just for this recipe.

Oatmeal Pancakes II

5 stars with modifications! "Mom's" pancake recipe for the family now. DH has a lock on banana pancakes... what the kids call "Dad's Pancakes." Now, I have my own, seperate but equal recipe! I have modified: 1/2 all purpose, 1/2 whole wheat flour; slow cooking oats substituted for quick oats; brown instead of white sugar; 1/2 the amount of baking powder; eliminated baking soda; 1/2 amount of salt; 1% milk w/ splash of cider vinegar; a little less oil in the batter. The oats need to soak for a little while to soften, this also helps to keep the batter from being "thin". I found no need for a food processor and simply hand whisked. While I lessen the oil in the batter, I grease the pan with butter at each application of batter. (That's right, butter! Between whole wheat, reduced fat milk, and reduced sodium something's gotta give). The butter added to the pan adds a nice browning to the edges and imparts a flavor that has no substitute. I simply remove the option to add it at the table. The kids insist on syrup but I love these pancakes with fresh fruit and powdered sugar. The modifications made were based on previous reviews and personal preferences, not on disappointment with the original recipe.

Pasta Primavera with Italian Turkey Sausage

A first rate dish that allows for plenty of personal modification. A nice way to break the habit of "spaghetti sauce" every time you find yourself looking at a box of pasta and a package of italian sausage.

Slow Cooker Latin Chicken

A new "go-to". I've personalized this recipe for my family by increasing the broth to 1 cup and substituting a can of drained corn for 1 can of beans. I've done away with first step of browning the chicken and have increased the slow-cooker temp to "high". Lots of positive feedback from all those that I've served it to. Love it.
