Bread Pudding Apple Pie

Ultimate French Toast

This has a very high egg to milk ratio, basically an egg for every slice of bread. I needed to double the recipe, but just couldn't justify using 8 eggs for 8 slices of french toast. So I only used 6 eggs and increased the milk just a tad. The recipe turned out great, and not too eggy. Everyone loved it and it cooked up nice and fluffy.

Strawberry Rhubarb Sauce

Herbed Chicken Fettuccine

A great, low-fat way to enjoy chicken fettuccine. The only change I had to make was to use a garlic herb soup mix because I couldn't find the onion herb one at a store where I live. My kids and I really loved this simple, yet very flavorful dinner.

Overnight Coffee Cake

Love this one for so many reasons. First, you make the night before, which is such a time saver in the morning. Second, it is easy to put together with ingredients that are usually on hand. Third, it baked perfectly in the time noted and turned out so moist with delicious flavors. I made a little vanilla glaze for the top, but this would have been great without it. Everyone kept making the comment that they loved it and wished I made a bigger pan of it - next time.

Dominican Style Oatmeal

I am a big fan of nutmeg, and was surprised that I had never tried adding it to my morning oatmeal. Since I am the only oatmeal eater in the house, I scaled this down to one serving. I probably used a little more than a pinch of nutmeg, and topped this with my usual raisins and walnuts. This turned out much creamier compared to using water to cook the oatmeal. Thanks!

Chocolate Mint Candies Cookies

One of the best cookies ever!!! The only change I made was to use mint chips and semi-sweet chips on the top instead of the mint candies. They swirled together beautifully. I love the colors, the texture, and the taste. Love them!

Zucchini Ranch Meatloaf

WOW! There's certainly a lot of different flavors and textures going on in this meatloaf, and they all work so well together. My kids didn't even care that there was "green stuff" in their meatloaf. This was devoured in one meal, and will definitely be a repeat in this house. This is a great way to get some veggies into dinner and use up some of that zucchini multiplying in the garden. Thanks!!

Yummy - kids loved it, but it is very sweet. I couldn't quite cut into nice shapes, so it turned out rather jagged looking. Good thing my kids don't care what things look like.

Corn and Black Bean Salad

Delicious. We didn't eat this like a traditional salad, though - we used scoops chips and ate it like salsa. I make this all the time now, and it is especially popular at parties. It's a great make-ahead dish!

Slow Cooker Texas Pulled Pork

I love slow cooker recipes, and this one was terrific. I followed the recipe exactly and cooked it for about 7 hours on low/medium. It shredded perfectly and tasted great on our homemade honey wheat sandwich rolls. This one is a keeper!

Sour Cream Noodle Bake

I knew my kids would like this, but I really enjoyed it as well. It is very similar to lasanga or baked spaghetti, but a lot easier and faster. Great weeknight meal.

Oat Waffles

These waffles turned out excellent. I did not have any oat flour, so I ground my regular oats in my food processor. The batter seemed really thin at first, but thickened up after about 5 minutes of sitting. They turned out perfectly brown and the family loved them!

Quick Chocolate Chip Cake

My new favorite cake. Perfect chewy texture with the burst of chocolate and subtle cinnamon flavor. I topped this with a cream cheese frosting with mini chocolate chips mixed in, and it was absolutely fabulous!

Mexican-Style Goulash

Family loved this dish. The only change I made was to cut back the onion to about 1/4 cup, just because of our preference. This dish was easy and quick to put together, and all it needs is a side salad for a complete meal.

Cinnamon Ice Cream

WOW!!! Wonderful, creamy, flavorful ice cream. The cinnamon really comes through in this. This ice cream is great just plain in a bowl, but is absolutely terrific on a plate of warm apple crisp. We had not planned on having it on the crisp, but about a week after making the ice cream, we had apple crisp for dessert and my husband found 1 scoop of this ice cream left in the freezer. We all had a tiny bite, but lucky him. This was the perfect compliment to the warm crisp.

Jack-O-Lantern Pumpkin Pancakes
