Bread Pudding Apple Pie

Reviewed: May 6, 2010
No need to put into a pie shell. It's just as good without and reduces the fat/calories.

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Aug. 6, 2010
The perfect chocolate chip oatmeal cookie. The edges bake up a little crispy, while the middle stays soft and chewy. This is my go to recipe for oatmeal cookies. I even use this and add in some cinnamon and raisins for a spicier version. Great recipe that I will use over and over!

Blackened Chicken

Cooked on the grill. I love my chicken slightly blackened anyway, so this recipe was perfect for me. We all loved the combination of spices.

Peanut Butter Glaze

I used this to top chocolate banana muffins. The glaze was easily prepared and was the perfect drizzling consistency for the muffins.

Easy Ham and Cheese Appetizer Sandwiches

Reviewed: Feb. 21, 2011
I omitted the onion in the topping, but otherwise followed the recipe. I knew my ham and cheese loving husband would like these, but my kids were fighting him for seconds and thirds. Needless to say, these were very popular, and considering how easy they were, I will be making these on a regular basis. This was a quick, easy way to feed everyone a weekend lunch.

Liz's Astounding Chocolate Chip Cookies

Reviewed: Feb. 16, 2011
These are great cookies; although, you would have to make these pretty tiny to get 48 cookies. I chose to make giant cookies and used my 1/4 cup scoop. I only ended up with 10 cookies. But even if you got 2-3 cookies for every 1 that I made, that's only 20-30 cookies. Still, these turned out beautiful. I used 1/4 cup butter and 1/4 cup shortening. Perfectly round, with a little crisping around the edges and a soft, chewy center. I actually like that it doesn't make a lot of cookies, because I like to try new recipes daily and don't need a lot of "extras" around. Thanks!

Buttermilk Cinnamon Bread

Reviewed: Aug. 7, 2010
What a moist bread. I made 1/2 batch, so only 1 loaf, and I wish I made another one, as it is almost gone. Like the cinnamon/sugar topping wasn't enough, I added a vanilla glaze to the top. Mine probably tastes more like a cake with the glaze on top, but it is fantastic, and I will definitely be making again. Thanks!

Raspberry Lemon Muffins

Reviewed: Aug. 2, 2010
Perfect lemon flavor. I used the optional lemon extract and left my raspberries whole. Everyone loved these muffins. I sprinkled them with some sugar before baking and they turned out with a little crunch on top. Great recipe that I will use often.

Guacamole

Reviewed: Feb. 6, 2011
I don't care for guacamole, but my husband loved this. The only change I made was to use lemon juice instead of lime because I have an abundance of lemons to use up.

Yummy Strawberry Shake

Reviewed: Jul. 28, 2010
Kids loved this one. How could they not? Strawberries and ice cream? I threw in a few raspberries and blueberries that I had leftover from another recipe. Thick, fruity, and refreshing on a hot and humid day.

Lighter Snickerdoodles

Reviewed: Jan. 31, 2011
WOW! I actually prefer these over a regular snickerdoodle. Made as directed, these cookies had a little crunch on the outside, but were soft and tender on the inside. I flattened them before baking and then gave them another little push down after about 5 minutes in the oven when the dough was softer. They turned out perfectly round. Will definitely use this recipe again.

Chipotle Crusted Pork Tenderloin

Reviewed: Jul. 17, 2010
The absolute best pork tenderloin I have ever eaten. I actually thawed the tenderloin to put in my slow cooker this morning, and I forgot to start it. I needed a recipe that didn't require a lot of marinating time that used ingredients that I already had. This was perfect! I made the rub in a gallon sized bag, put the pork in, mushed it around and put it in the fridge for about 45 minutes. We cooked it on the grill, and I could not believe how few ingredients could be so flavorful and how moist the pork stayed. The entire family was going on and on about how great it was. This will definitely be a recipe that I will make often. Thanks!

Chocolate Orange Fudge

Reviewed: Jan. 26, 2011
Orange chocolate flavor combination is wonderful. It literally took me about 5 minutes to make this fudge last night, and this morning, it was set and ready to devour. I added 1/2 teaspoon orange extract to up the orange flavor, and it was perfect. I also skipped the pecans. This was so easy and so good, I will for sure be making it again!

Amazing. Just like the "famous" candy bar. Anyone who loves coconut will love these. I made some with a whole almond, and some topped with slivered almonds. Both were great!

Garlic Cheese Quick Bread

Reviewed: Feb. 8, 2011
Lovely bread. While it takes awhile to bake, very little hands on time is required. I was able to make soup and a salad to go with the bread while it was in the oven. I didn't have any self-rising flour, so I was thankful for the tip included on how to make my own. The only thing I would change in the future would be to reduce the sugar just a smidge. Everyone in the family loved this, but I thought it was a little on the sweet side for a savory bread. Other than that , it was perfect!

Honey Fruit Salad

Reviewed: Jul. 13, 2010
There are so many deliciously ripe fruits in season right now, so I decided to treat me and my kiddos to a fresh fruit salad with lunch today. This takes no time at all to put together. I have never put honey on my fruit before, but it made it so good. I didn't have any poppy seeds, so I just left those out. I used strawberries, raspberries, mango, pineapple and canteloupe. It was an amazing combination, especially with the lemon and honey. Thanks for a great idea! UPDATE 7/27: This is the second time that I have made this recipe, and this time I used grapes, strawberries, canteloupe, and pineapple. I love the honey/lemon dressing and it dresses so many varieties of fruit. The beauty of this recipe is the versatility. I still haven't remembered to purchase poppy seeds, so they are once again absent.
