Oh, my kids were excited about this one. Chocolate, blended with more chocolate, and then more chocolate on top of that. Huge hit!

Breakfast Pies

Reviewed: Sep. 29, 2011
These were a hit with my kids for breakfast before school this morning. I did omit the green onions and peppers since my kids are not fans, but that's one of the great things about this recipe - it's easily customized to fit different tastes. Will be making these again using bacon instead of the sausage, possible adding in some mushrooms, or even making a southwest version with green chiles. Thanks for such a versatile, delicious recipe!

Raspberry and Strawberry Buckle

Reviewed: Sep. 29, 2011
Call it buckle, call it coffee cake. Either way, this is a delicious cake to have for breakfast, with tea, or for dessert. Only change was to reduce the butter in the topping to 1/4 of a cup. Turned out perfectly.

Applesauce Cake V

Reviewed: Sep. 27, 2011
I was making these for my kids, so I made this into cupcakes and didn't add in the raisins and walnuts; although, I think I would have liked them more had I included these ingredients. But, my kids liked them just as I made them, and they didn't last long in the house. I topped the cupcakes with Allspice Cream Cheese Frosting, also from this site.

Strawberry Shake

Reviewed: Sep. 27, 2011
I would have to agree with CC that I prefer to use all fresh fruit in my shakes and smoothies (and I would actually call this one a smoothie), but my kids wanted a strawberry smoothie and we didn't have any strawberries. This recipe is great just for that reason, and my kids loved it.

Different Chicken Cordon Bleu

Reviewed: Sep. 27, 2011
This was a popular dish in my house, and so much easier to make than traditional cordon bleu. I cut the recipe in half and used chicken broth instead of the wine. Other than that, I followed the recipe. My kids especially enjoyed the stuffing topping.

Raspberry Cup Cakes

Reviewed: Sep. 27, 2011
These came together beautifully, and they were delicious. I did freeze these for several hours before eating, but we preferred eating them when they had softened a bit. So we let them sit out for a few minutes before eating. The raspberry puree is so good on top, and we had extra whipped topping, so we put some of that on as well. I was fortunate enough to have fresh raspberries to use, but this is a recipe that I think would work just as well with frozen.

Sandy's Chocolate Cake

Reviewed: Sep. 24, 2011
My son could not have been more happy when I made this cake for his 8th birthday. He is a chocolate lover and loved this cake. I did take Mis7up's idea by using the Kit Kat bars around the edge and filling the top with M&M's. I kept this cake a secret from my son, and when it was brough out, his eyes were as big as golfballs. The cake was beautiful, and more importantly, delicious!!! Will use this recipe again and again when I need a chocolate cake.

Italian Zucchini Boats

Reviewed: Sep. 23, 2011
For sure a 5+ star recipe. This is now our favorite way to eat zucchini. With the abundance of zucchini from our garden this year, I have made many different kinds of zucchini boats; some with bacon, some with sausage, some with meatloaf. I had looked at this recipe many times, and it just didn't seem like it would have as much flavor as the others. But, after reading Naples' review, I knew I had to try it. I have to totally agree with her, this is an awesome, flavorful way to eat zucchini. I actually made my kids something else for dinner on this particular night and scaled this recipe to 2 for just my husband and myself. The kids tried it and asked for more, but neither my husband nor I wanted to share. Followed the recipe, but threw some extra cheese on the top. Still have zucchini coming out of the garden, so I know that I'll be making these again soon.

Ricotta Cookies III

Reviewed: Sep. 23, 2011
I had a cup of ricotta cheese leftover, so I cut this recipe in half. So glad I did, because I still ended up with 33 cookies. These are delicious, soft, cake-like cookies. I love the lemon glaze, but the glaze is the one thing that gave me difficulties in this recipe. It is like water if made as written. I ended up adding almost a full additional cup of powdered sugar to get it to the consistency it needed to be. So now I have a lot of leftover lemon glaze to find another recipe for:) Other than that, we love these cookies.

Fresh Salsa I

Reviewed: Sep. 21, 2011
Great, spicy salsa. The only change I made was to use a can of diced tomatoes and then to add in some green chiles separately. This was great with our tortilla chips as well as on our enchiladas.

Chicken Zucchini Casserole

Reviewed: Sep. 21, 2011
Although my kids are getting tired of zucchini being part of most meals lately, they did like this dish. The only change I made was to reduce the amount of butter. 3/4 of a cup just sounded like a lot for that amount of stuffing. I used around 5-6 tablespoons of melted butter, and the stuffing was a bit crumbly, but not greasy and heavy.

Lemon Curd Tassies

Reviewed: Sep. 21, 2011
It's hard to really rate this recipe because the only part that I used was the crust part. After reading so many mixed reviews on the lemon curd part of the recipe, I chose to use the Microwave Lemon Curd recipe from this site. Then I also topped these with a meringue to make them like mini lemon meringue pies. The crust worked wonderfully and was the perfect amount for 24 tassies. After baking, I used a teaspoon to re-indent the cups and they were ready for the filling. Everyone at the party really enjoyed these and they were gone quickly.
