White Chocolate Chip Oatmeal Cookies

Reviewed: Nov. 1, 2011
These cookies turned out perfectly. My daughters and I love white chocolate and these were a nice change from the usual oatmeal raisin cookies that I typically make. These were chewy in the middle, a little crisp on the edges and had a nice buttery flavor. I would have preferred to have added the pecans, but since my kids preferred otherwise, I omitted them this time. Great recipe that I am sure will be repeated!

Crazy Cake

Reviewed: Oct. 30, 2011
This wonderful recipe saved me a trip the grocery store this morning. Remembering that my son needed cupcakes for school tomorrow, we decided to make chocolate cupcakes, and then realized we had just used the last of the milk and eggs on breakfast. I found this cake recipe, made it into cupcakes, and they were perfect. I have tried to adapt other chocolate cake recipes into cupcakes, and have had a few mishaps. But this recipe worked very well, baking up beautifully. I topped these with decorator frosting (from this site) and then made spiderwebs with melted chocolate. My son was thrilled with the outcome and I was thrilled that I saved a trip to the store.

Double Chocolate Brownie Cake

Reviewed: Oct. 29, 2011
I made this cake into cupcakes for Halloween and they were perfect. The cupcakes are deep, dark, and rich in both chocolate flavor and color. They are perfectly moist and baked up beautifully. I have made about 6 dozen cupcakes for this holiday so far, and these have been the favorites. Can't wait to try it as a cake, also.

Pumpkin Ginger Cupcakes

Reviewed: Oct. 28, 2011
WOW!!! These are incredible cupcakes. They are exactly as the submitter describes - light, fluffy, and spiced just right. The crystalized ginger is just a perfect addition to these pumpkin cupcakes. I topped these with my own cream cheese frosting recipe and some fall sprinkles. I took these to a small party and received many compliments. Thank you for a great recipe!

Bloody Broken Glass Cupcakes

Reviewed: Oct. 28, 2011
This idea is genius, taking a simple vanilla cupcake and turning it into the perfect Halloween Party food. These are perfect for a teenage party. My daughter and her friends loved these!!! I didn't think they were difficult to make, just time consuming to boil the sugar mixture for so long. I had to make a change when it came to preparing the "glass". I only had 2 cups of sugar, so I cut that part of the recipe in half. My pieces of glass may have not been as thick, but they were perfect, resembling real glass. I would make one change and only add 1-2 drops of blue food coloring. Our "blood" was a little more purple than we would have liked. We tried adding more red, but it didn't work like we had hoped. Overall, this recipe is super fun and very original. Thanks so much for sharing this with us!

Barbecued Chicken Calzones

Reviewed: Oct. 27, 2011
This is a great recipe, especially if you are in a hurry. If you are lucky enough to get a can of pizza dough that will cooperate with you (and I was not this particular time), this recipe can be put together in a matter of minutes. My dough came out in pieces for some reason, so much of my time was spend putting the pieces together instead of just rolling the dough out. I had some already cooked chicken leftover that I shredded and combined with some really good honey BBQ sauce. After finally getting the dough shaped, these took no time at all to get into the oven and they baked very quickly. The family really enjoyed this one and I enjoyed the fact that it was fast and easy.

Strawberry Granola Squares

Reviewed: Oct. 27, 2011
I think that the outcome of these bars really depends on what kind of granola and jam that you use. I had some triple berry granola with bits of dried strawberries, blueberries and raspberries in it and also used homemade strawberry jam. These bars were delicious!!! The crust had a rich, buttery flavor with a slight crunch from the granola. The bits of dried berries were perfect for this recipe. The homemade jam wasn't too sweet and had lots of strawberry flavor. If I happen to have the right combination of ingredients, I would definitely make this recipe again.

Calzone

Reviewed: Oct. 27, 2011
Delicious. The dough was very easy to work with, and the top looked like it was braided after baking. The filling could be anything you desire, but I followed with the recipe and used pepperoni (turkey) and cheese. Kids and husband were huge fans of this for dinner, and we are already planning on having it again for Halloween.

Spicy Mexican Style Zucchini Casserole

Reviewed: Oct. 24, 2011
Another terrific way to use up that summer zucchini. The only change I made was to use black beans instead of pinto beans. This is a great main dish, or a very hearty side dish. Everyone really enjoyed this one!

Charleston Breakfast Casserole

Reviewed: Oct. 23, 2011
We love this dish, and have it quite frequently as part of our Sunday breakfast. I do make a few changes to better suit our family. I do not use the bell pepper, as several people do not care for them. I also don't put the butter over the croutons. This can also be done as an overnight casserole, as I sometimes do it. Fully assembled, I cover the dish and put it in the fridge overnight. In the morning, I put the dish on the counter while the oven preheats, then bake as instructed. This is a great timesaver in the morning. I have also done this dish with sausage instead of bacon, and it is equally delicious.

The Best Meatballs You'll Ever Have

Reviewed: Oct. 23, 2011
We had these meatballs in a marinara sauce on top of spaghetti. I did take a different approach to cooking these. I first browned them on the stove and then cooked them in the sauce in my slow cooker. They were very moist and tender. The only thing we didn't care for was the Cajun seasoning. But that may be because we were looking for more of an Italian flavor to go with the sauce instead of a Cajun one. Still a really easy, great meatball recipe.

Chocolate Zucchini Muffins

Reviewed: Oct. 22, 2011
Nice zucchini muffins. I cut the recipe in half to yield 12 muffins, and then used 1/2 oil and 1/2 applesauce to reduce the fat. Next time, I would keep the cocoa powder in the original amount as these weren't as chocolatey as we were hoping for. I also omitted the cardamom, as I don't have that spice. This is a great way to use up zucchini and "hide" it from your kids.

Pumpkin Bars I

Reviewed: Oct. 21, 2011
My favorite thing about this recipe is that these are true pumpkin bars, and are not cake-like at all. They are moist and have just the right amount of spice. I just used all-purpose flour and that worked just fine. I frosted these with my own cream cheese frosting with a little added cinnamon and they were a perfect fall treat.

Chocolate Chip Cookies I

Reviewed: Oct. 21, 2011
These were very good cookies, but nothing about these stands out from other chocolate chip cookie recipes. I did use 1/2 shortening and 1/2 butter and did not use the walnuts.

Buckeye Cookies III

Reviewed: Oct. 21, 2011
I have a major sweet tooth, and even I thought that these were extremely sweet. We much prefer the peanut butter balls that call for graham cracker crumbs or rice krispies instead of just powdered sugar. Dipping took some practice, but went pretty smoothly. I did save a little bit of dough and after taking the balls off of the skewer, I used a toothpick and some leftover dough to fillin the hole. Some were eaten by my kids.

Soft Chocolate Cookies

Reviewed: Oct. 21, 2011
These were very good cookies and were sort of a cross between a cookie and a brownie. I made half of them into sandwich cookies with vanilla buttercream in the middle. The other half I put a chocolate glaze with sprinkles on. My kids loved both kinds, but were partial to the sandwich ones, which these cookies were perfect for. With just using my cookie scoop, these turned out uniform and perfectly round. Chocolate chips would also be a great addition to these cookies.

Fruit Oatmeal Cookie Bars

Reviewed: Oct. 21, 2011
Delicious!!! The buttery crust was perfect with the tangy apricot/pineapple jam that I used. This was very popular in our house and barely lasted more than one day. Will make again with other flavors of jam - raspberry and blackberry would go very well in this recipe.

Butterscotch Cookie Bars

Reviewed: Oct. 21, 2011
These turned out very well, and my kids especially liked them. They are very sweet, so I cut them small and was able to get more than 18 small bars from the pan. I did not use the walnuts or raisins since my kids don't care for them.

Cranberry Squares

Reviewed: Oct. 21, 2011
Terrific, tangy cranberry bars. I cut the recipe in half because I only had a cup of cranberry sauce leftover to use up. I also added some pecans to the topping. These are perfect bars for the fall months.
