Ghirardelli Chocolate Brownies with Peppermint Bark

Except for using homemade peppermint bark, I followed the recipe exactly. These are wonderful, holiday brownies that people raved about. The peppermint bark gives the brownies a nice crunch as well as that light minty flavor. I know I will be making these again, soon.

Cranberry-Macadamia Bars

I made no changes to this festive dessert, and it was very well received. Everyone commented on the how there were lots of different flavors and textures, but how they worked so well together. Honestly, I wish that the base was not from a mix, and think that a shortbread base would be delicious, so I may try that next time. Great holiday colors!

Pumpkin Black Bean Soup

This soup was delicious and perfect for a cold, winter's night. I did make a few changes, just based on what my family prefers. I cut the onion down significantly, only using about 1/4 cup diced (since I added everything to my slow cooker, I was able to skip the butter part:). I also didn't use the ham at all, used vegetable broth, and added corn, making this a vegetarian meal. I made this really easy on myself, putting everything in my crock pot and cooking it on low for about 6 hours. Everyone really loved it and I plan on making it again.

Amazingly Good Eggnog

Tastes nothing like store bought eggnog, and that's a good thing. I don't really care for eggnog from the store, but I am having a Christmas dessert party, and decided to give this a try. It is amazing. I did not add the rum, instead leaving it for people to add themselves. This is perfect for holiday parties, and it was very simple to make.

Delightful Apple Spice Muffins

I made no changes to this recipe, and was very pleased with the results. My kids enjoyed these for their after school snacks for several days. I do like that these are mini muffins, and just lightly spiced, so they were perfect for my kids.

Elisa's Famous Fudge

I have had my eye on this recipe for quite awhile now, and decided to make this for a holiday function. After reading several reviews, I did make a few changes. I cut the butterscotch chips to 1/2 cup and upped the chocolate chips to 1 cup. Lastly, I added the pecans on top, and only to half the pan, in case of allergies or a dislike of nuts. The texture of this fudge is wonderful, creamy, and melt-in-your- mouth. The butterscotch flavor was just a little too strong for me, even with the reduced amount, and makes for a very sweet fudge. If you love butterscotch, you will love this fudge!

Cream Cheese Filled Pumpkin Muffins

We really enjoyed these muffins. I did make a few changes just based on the ingredients that I had and our personal preferences. I do not have any cardamom, so I just left that out. Also, I wasn't sure about a sunflower topping, so I made a streusel topping with flour, brown sugar, a little butter and cinnamon. This worked well with the muffins. Thanks for a great autumn muffin recipe.

Cranberry Orange Oatmeal Cookies

The flavors meld together very well in this cookie. The recipe yields a cookie that is soft and chewy in the center and a little crisp along the edge, which is just right. The orange and the cranberries make this a perfect cookie for the fall months.

Kelsandra's Pumpkin Cinnamon Rolls

My husband claims these are the best cinnamon rolls I have ever made. I have to agree that these are some delicious cinnamon rolls. The dough is amazing to work with. It rose nicely, rolled perfectly and baked up light and fluffy. I made the dough, rolled it out, and made the rolls the night before we had these for breakfast. I put the prepared rolls in the fridge overnight and then pulled them out about an hour before baking. The frosting is the perfect compliment to these rolls. We just had these, and they have already been requested again for next weekend.

Apple Crisp with Cranberry Sauce

I made this into 2 individual servings to use up some leftover cranberry sauce from Thanksgiving. This is my new favorite apple crisp recipe. I used Braeburn apples (because that is what I had to use up) and homemade cranberry sauce. The combination of flavors with the buttery, crumbly topping was perfect. I polished off both of the ramekins in a weekend's time and enjoyed every bite!

Gourmet Chicken Pizza

We typically have pizza once a week, and this was a nice change from our usual pepperoni pizza with red sauce. My husband and I loved this pizza, and my kids enjoyed everything except the big "chunks" of tomatoes. They picked some of them off, but really liked the rest of the pizza. This will become one of the "weekly" pizzas in this house.

Easy Lemon Cookies

Followed the directions, and ended up with soft, chewy, lemony cookies. These are easy to make since they start with a cake mix, and they bake up very quickly. My kids really liked these! I have also made these with a chocolate cake mix (exchanging the lemon extract for vanilla), and they are equally easy and delicious.

Enchilada Stuffed Shells

Dawn's Easy Red Velvet Sandwich Cookies

These were so easy to make, and so delicious to eat. My daughter took most of these to an early holiday party, and she reported that everyone loved them and that I should have made more. Because I was making these for kids, I omitted the coconut and pecans. These would work with just about any cake mix, and I think lemon with a lemon cream filling or spice cake with a cream cheese filling would be wonderful. But the red velvet is perfect for the holiday season! Great, easy recipe!

Microwave Oven Peanut Brittle

My husband loves peanut brittle, but I don't love the tedious task of boiling it on the stove. Even though I have a family recipe that I always make, I decided to try this and make it easier on myself this year. He did still like this, but it came out a little chewier and not as crisp as the brittle that I make on the stove. I am going to try it again and play around with the timing. I have a 1500 watt microwave, so I had to adjust the cooking times, and I may just need to up the cooking time to get the texture I am looking for. Overall, this recipe is awesome for saving some arm work and time standing over a hot stove.

Chocolate Surprise Cupcakes

Chicken and Gnocchi Soup

I have never bought or eaten gnocchi before, but now that we've tried this soup, I will be buying it more often. My kids LOVED it, even with the "green stuff". They were so disappointed that it was all eaten at one meal, and have been requesting it often. Will for sure be made again. This was easy and quick to prepare and is a terrific fall soup!
