Great Easy Waffles

Reviewed: Jan. 10, 2012
Everyone loved these waffles! I did double the recipe and am glad that I did. It was just enough for my family of 5 with one leftover for the kids to fight over!

Addictive Sweet Potato Burritos

Reviewed: Jan. 10, 2012
I really wanted to like these, and I thought that I would, being a fan of sweet potatoes. But these were almost too sweet for me. Maybe it's just because I am used to burritos having a spicy mexican flavor, maybe I just got a really "sweet" sweet potato, don't know, just wasn't a fan of these. I do like the fact that they are packed with fiber and vitamins and because of that, I may just have to try it again.

Doubly Delicious Peanut Butter Cookies

Reviewed: Jan. 10, 2012
Loved these peanut butter cookies. I add peanut butter chips to other peanut butter cookie recipes frequently, just to up the peanut flavor. The only change I made was to use 1/4 cup butter and 1/4 cup shortening since I don't have butter flavored shortening. This one went into the cookie keeper file.

Cocoa Kiss Cookies

Reviewed: Jan. 1, 2012
I found these pretty easy to make and didn't have any problems rolling the dough around the Kisses. They just weren't hugely popular around this house, and just a warning, these are very messy when the kids eat them. Powdered sugar, crumbly chocolate cookie...

Slow Cooker Creamy Potato Soup

Reviewed: Jan. 1, 2012
Love this slow cooker soup. I followed the directions, cutting down on the onion due to family preference, and omitting the dill weed, since I am not a fan. This was a great soup to come home to and perfect for the cold winter months.

English Royalty Chocolate Chip Scones

Reviewed: Jan. 1, 2012
These scones turned out just as we were hoping and my kids absolutely loved them. They have the perfect texture, not too crumbly, not too dense, and the chocolate chips go very nicely with the slight orange flavor. A favorite with my kids means this will be a repeat.

Cranberry Streusel Loaf

Reviewed: Jan. 1, 2012
Delicious bread!!! I love the orange flavor with the cranberries and the crunchy streusel topping. Top that with the fact that this bread only has much less butter than most quick bread recipes, and it's a winner!

Sopapilla Cheesecake Pie

Reviewed: Jan. 1, 2012
In the end, these rich little cheesecake bars turned out to be one of the best things I have ever eaten. But when the pan was in the oven, the butter ended up pooling horribly, and I found myself scooping it out with a spoon. I feel that the butter could be cut down considerably, possibly to only using 1/4 cup. This also took about 15 minutes longer to cook, and I was still worried that the middle was on the gooey side, while the edges were very brown. I will for sure be trying these again with less butter, as they were a huge hit at our mexican dinner party!

Blueberry Turnovers

Reviewed: Jan. 1, 2012
Considering how easy these were and how quickly they disappeared from the breakfast table, they definitely deserve a 5 star rating. Everyone loved these and we will be having again, and may even try different fillings.

Caramel Apple Bars II

Reviewed: Dec. 28, 2011
I love apples, and I love caramel, so I knew this recipe was going to be love at first bite. I would make these again and again if I could handle that amount of butter on a regular basis. These bars are wonderful. One change, or addition that I did make, was to add a sprinkle of cinnamon into the oat mixture. Not necessary, but I love cinnamon with apples. The crunchy, buttery topping is the perfect match for the gooey, apple filling. It's a good thing I was making these for a group of people, or I probably would have downed the dish myself.

Peanut Butter Cup Cupcakes

Reviewed: Dec. 25, 2011
The only good part of these cupcakes is the peanut butter cup in the middle, so just unwrap the peanut butter cup and eat that. I think the idea of the cupcake is cute, and my kids were very excited, as they all love peanut butter, but they, too, ended up picking out the candy and not eating the cupcake. I did make a chocolate frosting for a few to see if that would "save" them, but it didn't make a big enough improvement for anyone to eat them.

Chocolate Toffee Crunchies

Reviewed: Dec. 25, 2011
I would rather take the time and make regular toffee next time. This turned out to basically be a falvor lacking crust covered in chocolate. The toffee layer was lost between the two and was barely noticeable. Not a winner this holiday season, and I was really hoping it was.

Raspberry Fudge Balls

Reviewed: Dec. 25, 2011
I did not care for these at all, but some of the guests at the dessert party that these were served at said that they were quite good. I felt that the consistency was just off. They were kind of mushy, but gritty with the wafer crumbs. The raspberry taste was a bit artificial and not very strong. I would not make these again, as there are far better candy recipes out there.

Candy Cane Coffee Cake

Reviewed: Dec. 25, 2011
I made this for Christmas this year. I had some concerns early on in the dough process, as it was not a very workable dough and did not rise in the fridge at all. After refrigerating, I did divide the dough in half, but half wasn't nearly enough to make a decent sized coffee cake. I ended up using 3/4 of the dough to make one cake, and threw out the rest of the dough. It was very difficult to roll out, but I persevered. I did finally get it rolled and assembled. I opted to make a raspberry filling with an almond flavored glaze for the red and white striped effect. Once again, the dough did not copperated and double in size even after 1 1/2 hours. But, the cake did bake up beautifully and tasted wonderful. The candy cane shape was achieved, and everyone loved it. I think that this could be done with a different dough recipe that would be easier to work with.

Rum or Bourbon Balls

Reviewed: Dec. 25, 2011
I made these using leftover rum from the egg nog that I had made. Although I did no try these, they were a huge hit at the dessert party and everyone commented that they were very good.

Peppermint Chocolate Fudge

Reviewed: Dec. 25, 2011
I adore this fudge. The light peppermint flavor is just right. My only complaint is that a day after making it, the crushed candies start to get runny and start melting into the fudge. We still ate it, it just didn't look as nice as when it was first prepared.

Fudge and Marshmallow-Topped Cocoa Cookies

Reviewed: Dec. 25, 2011
Even with the many steps required in the making of these cookies, I found that they were fairly simple and quick to make. Timing is essential in getting your marshmallow to look just right on the top of the cookie. Not enough time, and it won't squish dowm enough. Too much time, and it will be melted all over. Two minutes in my oven was just perfect. The fudge topping set up very nicely and I didn't have any messy fudge running off the tops of the marshmallows. My kids and their friends loved the look and the taste of these cookies.

Venice High School Cherry Butter Cookies

Reviewed: Dec. 25, 2011
I did not use the walnuts, but instead used white chocolate chips to make these red and white for the holidays. When the cookies were cooled, I dipped them in melted white chocolate and topped with holiday sprinkles. The looked very festive and are a delicious cherry cookie.

Chocolate Cherry Cheesecake

Reviewed: Dec. 25, 2011
I made this cheesecake into little mini cheesecakes for a dessert party that I was hosting. It was the perfect holiday cheesecake. I did take out the pecans and put in mini chocolate chips instead, but otherwise followed the recipe. It was highly popular and I have had several requests for the recipe for others to make for Christmas dessert. I think this would also be a great dessert for Valentine's Day.

Cookies....All Dressed

Reviewed: Dec. 22, 2011
I originally made these and reviewed these when CC had it as a personal recipe in her recipe box. These are my husband's favorite cookie. I make them all the time, following the recipe just as written. I can't imagine anyone claiming that these would be bland with all of the different ingredients that are included. They are sweet, salty, crunchy, chewy, everything you would want in a cookie. I will continue to make these frequently and am so glad that this recipe is now "kitchen approved"!
