Sour Cream Chocolate Chip Cake I

I was so excited about this recipe. I chose to make this into cupcakes, and they were not nearly as moist as I thought they would be. With the butter and sour cream, I was expecting a moist, flavorful cupcake. But they were rather dry and crumbly. Cupcakes usually don't last that long around here, but these were still here days after I made them.

Amazing Whole Wheat Pizza Crust

Followed the recipe... and it is a great one! I love the flavor of the crust, and it was crunchy on the outside and chewy on the inside. Great, go to recipe for wheat pizza crust.

Amazingly Delicious Whole-Grain Brownies

After making these and trying a little bite, I didn't think my kids were going to go for these at all. My kids love brownies - rich, fudgy, sugary sweet brownies. But they actually liked these more than I did. Even though I think they would have eaten these plain, I made a batch of peanut butter frosting, which put these over the top for my kids!

Kristin's Fudgy Brownies

I have made browies with cocoa powder, brownies with melted chocolate, brownies from a box, but had never made brownies with chocolate syrup before. While these baked up beautiful and my kids liked them, I have had richer, fudgier brownies and won't be making this one again.

Mock Lemon Chiffon Cake

My only concern with this cake was the layers sliding, especially when cutting into it. But letting it sit in the refrigerator for a few hours made the cake stable enough to cut into it without any problems. The cake was wonderful looking, and the family enjoyed it. This one is best eaten the day it is made. In the days following, it became a little soggy, as the strawberries were weeping.

Fresh Broccoli Salad

Broccoli salad is one of my husband's favorites. I chose this particular recipe because it uses almonds instead of sunflower seeds, which I didn't have. The only change was to omit the red onion, as it is not one of my husband's favorites. This is a great summer BBQ salad.

Fluffy Buttercream Frosting

Soft Giant Pretzels

Still working on my rolling and shaping, but these turned out delicious. My kids love walking through the door after school and smelling homemade pretzels. They are one of their favorite after school snacks. Love that this recipe utilizes the bread machine, so there is very little hands on preparation, until the rolling. A keeper recipe in this house!

Stuffed Shells III

Unlike the submitter, we actually prefer cottage cheese over ricotta, so that is what I used. Kids and I don't care for mushrooms, so I omitted those. This recipe wasn't much trouble, and the kids gobbled it down. Thanks!

Chocolate Peanut Butter Squares

Made 1/2 of the recipe and put into an 8X8 pan. Letting these set up in the fridge is the key to easy removal from the pan. They cut into perfect squares and were a favorite, especially with the kids, at our party dessert table.

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

Followed the recipe and the whole family loved it. I used all turkey for the recipe, which I enjoyed as a salad and my kids enjoyed in taco shells. Making a big batch and freezing it means having an easy and tasty meal on the table in only minutes. Great recipe that this family will rely on frequently.

Banana Chip Muffins I

Independence Day Cookies

Only made 1/2 a batch and then used 1/2 butter and 1/2 shortening. The colors are great for any patriotic holiday. I made these for Memorial Day and they were a huge hit at the party. The did flatten out a little bit as they baked, but that may have been because of the butter that I used.

Creamy Lemon Pie

This dessert really couldn't get much easier. I even made my own graham crust, and it still only took minutes to make. It was a wonderful, light, tangy dessert, perfect for the summer!

Strawberry Lemon Muffins

These were just okay. The first day, they are good muffins; although lacking in lemon flavor. But the next day and the days after, they become gummy and gooey. The strawberries make these very moist, almost too moist. I would only make these if they were going to be eaten the first day. I would also add some lemon extract to boost the lemon flavor.

Lemon-Cream Cheese Cupcakes

These are seriously some of the best cupcakes and best frosting we have ever had. And they came out looking fantastic! The frosting is perfect for piping, holding its shape just great. I could not have been happier with this recipe and will for sure be making it again!

Almond Chocolate Coconut Cups

I had a few issues putting this recipe together. The end result gets 4 stars, but the preparation gets a 2. First, when the little cakes bake, they pretty much fill the entire muffin opening. And if you don't push them back down immediately after they come out of the oven, they get hardened like that very quickly. I followed the instructions of keeping the filling warm to fill the chocolate molds, and if you don't, it begins to separate and the coconut falls to the bottom. At this point in the recipe, it should tell you to chill the cups before adding the chocolate topping. I added the chocolate on top of the warm filling and it just ran all over the pan, making a huge mess. After doing 3 cups, I stopped, put the pan in the fridge and chilled for about 30 minutes. Then I came back to a slightly thickened chocolate glaze and added it onto the chilled coconut filling. This worked much better. In the end, the chocolate cups were kind of hard and crumbly, and the filling is extremely sweet. But after my changes, they did turn out very pretty with some sliced almonds on top. Too many steps, too much work, and not a great finished product.
