Rhubarb Berry Cheesecake Pie

This recipe gets 4 stars for flavor, but only 1 star for the fact that the filling just would not set. I followed the recipe to the letter and refrigerated the filling for 4 hours before adding the cooled topping. Even after refrigerating for another 7 hours, the filling was so runny. I ended up putting it into the freezer to try and salvage it, but it still didn't completely firm up. Plus that kind of ruined the topping for me, which became icy. But, the topping is amazing. I would have no problem making the topping again to put on a different cheesecake filling.

Beth's Orange Cookies

These are so good. The cookie is like a little orange cake, but the frosting is what makes these so delicious. The frosting really adds the orange flavor to these cookies. I only made a third of this recipe and ended up with 27 cookies. They lasted about 3 days and were starting to get a little gooey, so I think if you don't have a lot of people to eat these right away, you may want to cut the recipe down.

Chocolate Waffles I

Kids loved, loved, loved these. I would consider these more of a dessert rather than breakfast, but let the kids pick what they wanted today. I added in some mini chocolate chips and 2 of my kids had these with peanut butter and called them Reeses waffles. Probably won't be something I will make them very often, but the recipe is very good.

Cheddar Mashed Potatoes

Delicious potatoes. In an effort to make these a little healthier, I used turkey bacon, cut the butter to 2 tablespoons (didn't even notice the reduction) and used light sour cream. These potatoes were a perfect side dish to our turkey meatloaf and would go well with a number of main dishes.

Toffee Bar Brownies

What's not to like? Brownies, topped with more chocolate and toffee! I even made the brownies following the low-fat method on the box, and you couldn't even tell with everything else going on. I also just used toffee bits instead of the chocolate covered bars, and 1 container of whipped topping. Pan size is not specified in the directions, and because I didn't want the brownie layer to be too thin, I used a 9X9 pan. Using 16 ounces of whipped topping would have been way over-kill for this pan size, but may work if you are using a 9X13 pan. Kids really loved this one!

Amish Friendship Banana Nut Bread

Our new favorite banana bread! Using the friendship starter always produces such moist, flavorful loaves of bread, and this one is no different. I did cut this recipe in half, so I only had to use 1 cup of the starter. I also used 2 full eggs, and added in a small package of dry banana pudding mix. Most other friendship bread recipes that I have made call for vanilla pudding, so I decided to add the pudding, and banana just seemed to be the right choice for this bread. It was a huge success. I now have the starter going with several in the freezer because of how much we enjoy this particular bread!

Swedish Meatballs I

Delicious. I was actually looking for a way to use up some cream of wheat cereal that nobody was eating. I followed the recipe, mincing the onion very finely, and only using about 1 tablespoon to please my kids. I also put the meatballs in my slow cooker with the soups and cooked on low for about 6 hours. They were tender, moist, and flavorful. We had these served over egg noodles, but they would also be good over rice.

Corn and Black Bean Salad

Delicious. We didn't eat this like a traditional salad, though - we used scoops chips and ate it like salsa. I make this all the time now, and it is especially popular at parties. It's a great make-ahead dish!

Zucchini Boats on the Grill

Fantastic!!! I love these zucchini boats. So much flavor with the bacon, jalepeno, and my favorite, green chili peppers. Made a few modifications based on my kids' dislikes and what I had on hand. I used bread crumbs instead of the piece of bread. I felt that the crumbs acted as a binder more than little pieces of bread would have. Also omitted the olives as we don't care for them, and barely used any onion (kids). Everything in this dish comes together so well. And with my healthy zucchini plant doing very well this year, I will have plenty of chances to have this one again:)

Orange Cranberry Oatmeal

I was very pleasantly suprised with this recipe. Because I don't usually care for canned mandarin oranges, I wasn't sure how I would like this, but they really work in this recipe. The sweet oranges, tangy cranberries, and chewy oats are perfect together. I have already made this several times and will continue to make it. Thanks!

Caramel Macchiato Banana Bread

The caramel macchiato is my husband's favorite drink at the coffee stand. He also happens to love banana bread, so when I saw what Dianne had created, I knew I had to try it. The bread is so moist and flavorful, with all of the flavors being subtle and not overpowering. My only minor issue with the bread was the glaze. After boiling the ingredients together, mine was very watery and without constant stirring, the butter kept separating. To make it into a spreadable consistency, I added in some powdered sugar. Not sure how much, I just dumped some in and mixed it to a light brown frosting. It was perfect, and we were licking the pan clean after the bread was glazed. I am sure this will be a repeat in this house! Thanks for another wonderful recipe, Dianne:)

Make this all the time - kids love it. Omitted the green pepper this time and added in turkey bacon. I also try and use turkey sausage when I have it. This is a quick, easy, delicious breakfast dish.

We have these all the time because they are so easy, yet so good. I usually omit the onion when making these for my kids, and we dip the wedges in salsa instead of ranch. Great meal or snack!

Gelato

This was a good way to use up some egg yolks and some berries that I had. I made the gelato base and then added in some raspberries, blackberries, and blueberries that I had run through my food processor. Straight out of the ice cream maker, this was creamy and absolutely delicious! After sitting overnight in the freezer, it was a brick. We had to let this either sit at room temperature for about 30 minutes or microwave it, just to be able to scoop it out. The flavor was awesome, just wish I knew how to keep it from getting so hard.

Cranberry Pistachio Biscotti

I don't normally like biscotti, but this one is awesome. I love the chewy cranberries with the crunchy, salty pistachios. Not sure how long they've been around, but I found already shelled pistachios in the store, which made this recipe much easier. Drizzled with some melted white chocolate, dipped in some chai tea, yum!
