Summer Berry Cheese Pie

YUM!!! So delicious. I made my own graham crust and put this in a 9" springform pan to make it easier to get the pieces out. After making the cream cheese mixture, I realized that I had about 4 ounces of whipped topping leftover in the fridge, so I folded that in to make it a bit lighter. It worked great. The topping is fabulous with those berries. It doesn't really get very solid, so it's a bit messy getting a pretty piece out of the pan. But if you don't care about presentation, this is a fabulous summer dessert.

Open-Faced Turkey Tacos

Love these! Pretty much followed the recipe exactly, but used just the red pepper since I didn't have a green pepper. These are great because everybody can put their own toppings on the turkey, bean filling, which is very flavorful. Even though cheese is not listed on the ingredients, we did sprinkle ours with some cheddar cheese.

Hidden Valley Ranch Smashed Potatoes

Very tasty taters. These went great with our ranch meatloaf. I like the fact that they didn't have a lot of added fat. I used 1/4 cup milk and 1/4 cup low fat sour cream just to make these creamier. The sour cream added a little more flavor as well. Great recipe!

Uncle White's Bread Machine Rolls

These are the best!!! They are soft, moist, and would go with just about any meal. In fact, these were more popular than the meal itself. My kids inhaled these, wanting more than just one each. They also make great sandwich buns the day after. I didn't put the melted butter on all of them, fearing this would make them mushy the next day. And, the best part, the bread machine does all the work for you. This is an easy and excellent recipe for rolls.

White Texas Sheet Cake

This is my daughter's favorite cake. I have to say, that if it wasn't so high in fat and calories, we would have this more often. I love the almond flavor. The fact that this cake bakes so quickly and the frosting is added while the cake is warm makes this cake even more appealing. And it does seem to get better if made ahead of time. This cake is wonderful for a potluck, which is what I made mine for. It was incredibly popular with kids and adults. I cut mine into individual servings and topped each with 1/2 of a cherry. I sprinkled this cake with almonds instead of walnuts, because of the almond flavoring.

Mexican-Style Goulash

Family loved this dish. The only change I made was to cut back the onion to about 1/4 cup, just because of our preference. This dish was easy and quick to put together, and all it needs is a side salad for a complete meal.

Blueberry Upside-Down Cake

I made no changes in this recipe, and it came out perfectly. The blueberry lemon flavor combination was very nice. The only issue (and it is minor), was that the almond extract flavor was pretty much undetectable. I might consider cutting back on the lemon zest in the cake to let more of the almond flavor come through. Great cake!

Cherry Almond Oatmeal

I eat oatmeal almost daily and am always looking for ways to change it up a little bit. We use vanilla almond milk on a regular basis and love it. This oatmeal is so good. The crunchy almonds go so well with the sweet milk and chewy, tart cherries. I have already made this several mornings and will continue to make it. Thanks!

Dee's Roast Pork for Tacos

This recipe was right up my alley because I love green chiles. I used a pork tenderloin, and it came out moist, tender, and full of so much flavor. Plus, this recipe is so easy with very little work required. We ate these in soft tortillas, and it was a delicious dinner.

Cheese and Sausage Stuffed Zucchini

We loved these, and the only reason I am giving it 4 stars is because while baking, most of the cheese topping runs off the zucchini and into the pan. So before I broiled these, I scooped up the cheese mixture and then added some shredded cheddar cheese to the top. Love the sausage flavor (and I even used turkey sausage), fresh tomatoes from my garden, and the gooey cheese. Overall, this recipe is great. I might try adding the cheese halfway through the baking process to prevent so much run off.

Blueberry Waffles with Fast Blueberry Sauce

These were just okay. Judging from the batter, I thought these were going to be light and fluffy with a slight crunch on the outside. But they had no color, no crispness. They were, for lack of a better description, limp, with very little flavor. I think they would be better with some sugar. The sauce, is amazing. I would make the sauce again, with the great citrus flavor, to go on other waffles.

Rhubarb Pudding Cake

I haven't found a more delicious way to use up rhubarb yet. This was a terrific dessert warm out of the oven with vanilla ice cream on top. The topping has a little cinnamon crunch, and the rhubarb is creamy and not too sweet. I hope I can get my hands on some more rhubarb to make this one again.

Nectarine Blueberry Crumble

Pretty much followed the recipes, except I used graham cracker crumbs in stead of the macaroons. I think the macaroons would have been better, but I just didn't have any. This is a great, lower fat recipe for those summer fruits. My kids aren't huge fans of fruity desserts, and after a few days, the crisp part was a bit gummy. This would be a great recipe for a block party or get together.

Fresh Southern Peach Cobbler

This was my first time making and eating peach cobbler. I simply went for a highly rated recipe, and this one is perfect. I can't believe I waited so long to try it, and I can't wait to get more peaches and make it again. The cobbler part is absolutely perfect, not too crisp, not too doughy and the cinnamon is just right. This one is right up there with my all time favorite recipes on this site!!

Fiesta Fry Pan Dinner

I was looking for a way to once again, use up some of my zucchini. Didn't use the onion because I was out, but my kids don't like onion anyway. I used canned diced tomatoes instead of stewed. A couple of use put the mixture on tortillas and some of us just scooped it up on tortilla chips. Great either way!

Smoked Sausage and Zucchini Saute

Wonderful, easy, quick dinner. I used turkey sausage, and because I was using a non-stick pan, I didn't even add the margarine. We had this over white rice, and everyone really liked it!

Cool Waters Shakes

My kids said that this tasted like cotton candy in a drink. I would have to agree. This is incredibly sweet, but my kids still liked it. I think this would be very good with different flavors of jell-o. Next up, raspberry and cherry flavors:)

Zucchini Ranch Meatloaf

WOW! There's certainly a lot of different flavors and textures going on in this meatloaf, and they all work so well together. My kids didn't even care that there was "green stuff" in their meatloaf. This was devoured in one meal, and will definitely be a repeat in this house. This is a great way to get some veggies into dinner and use up some of that zucchini multiplying in the garden. Thanks!!

Chocolate Chip Orange Zucchini Bread

This is an unusual combination of flavors. Not great, not horrible, just different. I had a problem with the chocolate chips sinking to the bottom, as well as this sticking to the pan, even though it was thoroughly greased. I am glad I gave this a try, but probably won't be making again.
