Best Spanish Rice

Light and Airy Cheesecake

This was indeed light and airy. It definitely had a much lighter texture than a typical cheesecake. Mine turned out great, even though I didn't do the water bath - I just took a chance that it would be okay without it. We topped this with sliced strawberries, and it was a great, light dessert.

Key Lime Cake II

I made this into cupcakes and did not make the glaze. The cake was good, but still more of a lemon cake rather than a lime cake. The cupcakes were still very good and incredibly moist. I chose to make a lime cream cheese frosting. I used one of the lemon cream cheese frosting recipes from this site, and just subbed lime in place of the lemon. These were very popular at the get together I took them to.

Cheddar-Bacon Mac and Cheese

Kate's Light n' Fluffy Buttermilk and Chocolate Chip Waffles

Kids loved these. I actually didn't have any of these waffles, so I can only base it on my kids' rating. The recipe came together smoothly, cooked up very well (no sticking to the waffle iron), and the waffles looked great.

Double Chocolate Sprinkle Cookies

I cut this recipe in half and omitted the walnuts since my kids don't care for them. These are very good cookies. You get a double dose of chocolate with all of the sprinkles and chocolate chips. These baked up very nicely, not too thick, not too thin. Crispy edges, chewy middles. Of course, my kids like anything with sprinkles, and these were no different. So glad I found this cookie recipe.

Creamy Carnival Cups

I was the only one who ate any of this, and I thought it was just okay. The cups just never really seemed to firm up like I was hoping they would. I was thinking they would be more like jello-o, but they were more like a loose pudding. They did look very nice, and had a double layer look to them. I did use strawberry jell-o and topped these with diced strawberries and toasted coconut.

Lite Sausage Primavera

I used turkey sausage for this recipe. My kids liked this one, but my husband and I really loved it. It had just the right amount of spice, and the zucchini and pepper went very well with the sausage. This would also be very good served over rice instead of pasta. Will be repeated often!

Very good corn muffins. I am a big fan of green chiles, so I really liked these. They went very well with the soup we had for dinner. These are simple and easy to make, especially since they start with a mix.

Herbed Chicken Fettuccine

A great, low-fat way to enjoy chicken fettuccine. The only change I had to make was to use a garlic herb soup mix because I couldn't find the onion herb one at a store where I live. My kids and I really loved this simple, yet very flavorful dinner.

Savory Cheddar Zucchini Muffins

Thanks, Pam, for an excellent savory muffin recipe. My kids weren't totally sold, until I told them there was bacon in the muffins. Then they ate 2 each. Another delicious way to use up some zucchini. We had these with our herbed chicken fettucine (also from this site), and they were perfect.

A soft, chewy pretzel wrapped around a hot dog? Yup, it's super yummy. Not only did these turn out great tasting, but they looked great, too. I didn't know how I would do at wrapping the dough around as perfectly as others seemed to do, or how the dough would stay on the hot dog in the water, but I only had 1 dough casualty. These were a huge hit for dinner, and also for lunch the following day. Thanks:)

Easy Whipped Cream

I so wanted this to work. I thought it would be just perfect on the cheesecake that I had made. But it was just a soupy mess. I whipped and whipped with my stand mixer, nothing. I read the reviews that said all of a sudden this would just come together and thicken up, but that never happened. Not saying that I wouldn't give it another chance, but I went with a different whipped cream recipe on this occasion.

Super Duper Oatmeal

Tasty oatmeal. I cut this recipe in 1/2, except I did use 1/2 cup oats. I only added a tiny bit of applesauce because I didn't want it to have a strong apple flavor and it didn't need any more moisture added. Happy that I tried this one, but I have had better oatmeal recipes, so I don't know that this one will be a re-do.

Cranberry-Orange Spiced Oatmeal

I was lucky enough to have read a lot of reviews of this recipe, and pretty much assumed that it was going to be in need of some sweetner to counter the effect of the OJ. I tasted a tiny bit, and then added about a teaspoon of brown sugar. That was the trick, and I enjoyed this for breakfast. I also used fresh blueberries instead of frozen.

Banana Chocolate Chip Cake

Honestly, I would not call this a cake, but rather a bar recipe. Mine came out very dense, without much rise or fluff to them at all. The flavor is all right. Without the frosting that I put on (I used the banana butter frosting from this site), I think most of these would have been wasted.
