Peanut Butter Cupcakes

I cut this recipe in half to yield 12 cupcakes. As much as I thought my peanut butter loving kids would love these cupcakes, they just didn't. If it weren't for the fact that I topped these with Caroline's Chocolate Frosting (from this site), most of these would have gone to waste. They are really lacking in peanut butter flavor, and while they aren't dry, they are crumbly. Even with the relatively low amount of shortening (1/4 cup for 12 cupcakes), combined with the peanut butter, these have an almost greasy texture. Sorry, these won't be a repeat in this house.

Rhubarb Blueberry Muffins

The submitter is correct - these muffins are awesome. Hardly lasted a day in this house. Didn't change a thing but to add some raw sugar to the tops before baking. This is a fabulous summer muffin recipe when rhubarb and blueberries are in abundance.

Easy Chocolate Chip Cookie Dough Truffles

If you have ever made the frozen cookie dough balls from this site, you must make these. These are even better with the addition of the toffee bits. The dough was very easy to work with, and I had no problem rolling it into balls. I made the balls and then refrigerated them over night. In the morning, I dipped them in the melted chocolate and topped some with more toffee bits, and others with chocolate jimmies. My family and friends couldn't stop eating these, and the recipe was requested several times. These are perfect for parties. Try this, you won't be disappointed!

Easy Pavlova

This was easy...and delicious. The true flavor of this dish is whatever you decide to make it. I chose to top our pavlova with whipped cream and a mixture of blueberries, strawberries, and blackberries that I had let sit with a little sugar for a few minutes. The berries were just perfectly ripe and the combination of the berries and the sweet pavlova was perfect. This is a perfect light summer dessert!

Banana-Zucchini Bread

Delicious bread. Great way to use up zucchini as well as bananas going bad. I cut this down to one loaf and then used 1/2 oil and 1/2 applesauce. At first, I wondered about the addition of the cranberries, but they add a nice chewy tang to the bread, and I am so glad I didn't omit them. Bread turned out moist and full of flavor! Thanks!

Stuffed Strawberries

These are so much easier to make than I imagined. Definitely follow the intructions to make the cross cut in the strawberry. I found these very easy to fill using a pastry bag with a large star tip. Once the tip was down in the strawberry, all I did was squeeze and lift the bag out. These turned out beautifully and would be an impressive addition to any table. Plus, they taste great. Kids enjoyed these just as well as adults. Thanks for a great idea!

Idaho Fry Sauce

My kids make fry sauce using mayo and ketchup all the time, and my husband (who is from ID) always says that's it's missing something. This recipe hit the spot for all of them. The only downside...now they all want it this way and not the old simple way:)

Tender Barbecued Chicken

I chose to make this using chicken breasts and then shredded the chicken to use on sandwiches. Delicious, easy, and so little work using the slow cooker. Will be making again in the upcoming fall months!

Mexican Tinga

I was really scared that this was going to be too spicy for my kiddos, and it was for my 7 year-old son. But my two older daughters loved it, and said that I was just being wimpy. I do have slightly wimpy taste buds, and did think this was on the spicy side, but it had such terrific flavor, I couldn't stop eating it. This is so different from the usual mexican chicken that we are used to eating using taco seasoning. This recipe was quick, simple, and so good. Thanks!

Fudge Brownies I

Like eating a piece of rich, chocolate fudge. After chilling, these were easily cut into nice squares and removed from the pan. Simple, delicious, fudgy brownies!

Cookies....All Dressed

Found this recipe last night and was thrilled when I realized that I had all of the ingredients needed to make a batch. Just got done baking them, and they are soooooo good. These cookies have it all going on! I crushed up the pretzels fairly small to make sure that every bite had a little bit of everything in it. They are crunchy, salty, chewy, chocolatey, all at the same time. In this family, we are cookie dough eaters. The dough is the best we've had so far. Considering how my husband has been raving about these, I will be printing the recipe and keeping it handy. Thanks for a terrific cookie recipe!!

Quinoa and Black Bean Chili

Delicious!!! My mother, who is on a gluten-free diet, is visiting, so I am looking for recipes that we can all enjoy while she is here. Because of some pepper intolerance, I omitted the pepper, but otherwise made the recipe as written. This is a very, very thick chili. Some of us ate it in a bowl with a spoon, like chili would be eaten. But my kids and husband actually preferred this rolled in a tortilla with cheese, sour cream and lettuce. Either way, this made for a delicious dinner for the entire family. Thanks!

Zucchini Raspberry Cupcakes

Delicious cupcakes. I know other reviewers have made this point as well, but you can't even tell there is zucchini in these cupcakes. The chocolate raspberry combination is amazing. I topped these with cream cheese frosting, which was the perfect compliment. Perfectly moist, great flavor, wonderful cupcakes!

Aunt Norma's Rhubarb Muffins

The new favorite in this house. These are absolutely fabulous. I was lucky enough to have a friend give me multiple stalks of rhubarb, enough to try several new recipes. I have now made these 3 times in the last week, giving some to friends, but most being eaten by my family. They are the perfect moist, tender texture with that great sugary, crunchy topping. Such a winning recipe!

Bumbleberry Pie II

Love the different flavors and textures of this pie. The juices came together nicely, and were neither too runny nor too gummy. I did not use the recipe for the crust, as I have a favorite pie crust recipe that I stick with. If you are lucky enough to have all of the fresh fruit called for in this recipe, definitely give this one a try.

Anniversary Chicken I

Delicious! We had company for dinner, and this was just perfect. Everyone raved about this dish, especially the topping. My kids wanted more of the topping without the chicken. This came together quickly, and I usually have all of the ingredients in the house, so this will be made again!

Rhubarb and Strawberry Pie

The flavor of this was down right perfect. My only gripe about this pie was that the filling was a little on the gummy side, as the flour didn't seem to incorporate fully. I mixed the fruit with the flour and other ingredients and let it all sit together while I made the crust in hopes of preventing this from happening, but was not successful. I am not sure what else to do in this situation. Won't keep me from making this pie again. My husband and I both love strawberries and rhubarb together and this one had the perfect sweet, tart combination.
