Raspberry Chocolate Chip Muffins

These were pretty good muffins. While we enjoyed the raspberry chocolate combination, the oats gave these an odd texture. Maybe soaking the oats in the milk and OJ before adding them to the batter would help. These baked up beautifully.

Cranberry Coffee Cake

Quick, easy to put together, and delicious. I even used the low-fat Bisquick baking mix, and this still turned out wonderful. I think that different varieties of jams and pie fillings could be used instead of the cranberry sauce to change up the flavors.

Blueberry Apple Crisp

Take this out of the oven, let it cool for just a few minutes, put a big scoop on a plate and top it off with a scoop of vanilla ice cream. Absolutely wonderful!

Chewy Cocoa Brownies

Delicious, chewy, fudgy brownies. My only complaint is that these are rather thin brownies, which could be easily solved by using a smaller pan and increasing the baking time a little. I added some chocolate chips to the top before baking and then just served with powdered sugar on top. I used a foil lined pan and refrigerated for awhile, which made these very easy to remove from the pan and cut into nice pieces. They do taste best at room temperature.

All-Bran Cranberry Crumble Coffee Cake

Had some issues with this recipe. Preparation went well, and this cake looked great going into the oven. But after baking for 30 minutes, the top was getting very done, with the cranberries almost turning black. After 40 minutes, the middle was still raw, and the edges were very brown. The middle was finally done after 50 minutes, but the edge was almost impossible to eat, it was so over done. I let it sit for a few minutes and cut into the cake. The topping was just a gooey, greasy mess. We did eat a little bit, and the tartness of the cranberries does offset the sweetness of the cake, so we did enjoy the flavor. I did follow the directions exactly, making this the first time. If I was going to make this again, changes would have to be made. To begin, I would use a larger pan, cut the sugar in the topping to 1/2-3/4 of a cup (a lot of the sugar never really incorporated), and cut the butter in the topping to 2-3 tablespoons. I would also put some of the cranberries into the batter. Sorry, just wasn't a winner for us.

Cheddar Bacon Hamburgers

I don't have horseradish, so I didn't use that. Kids and husband loved these, as I thought they would, knowing how much they all love their bacon. I am going to have to take their word for it that these were good, as I didn't have any. This is a nice, simple way to jazz up some hamburgers.

Oven-Roasted Potatoes

We loved these little potato gems. Was slightly worried about the amount of paprka, which resulted in a very orange color, but it gave the potatoes a nice flavor. Would for sure make again!

Zucchini Pasta

This is a simple, quick, and light dinner for the summer, especially with the abundance of zucchini. I did use penne pasta since I didn't have any rotini, but that was the only change I made. This dish was popular with both the kids and adults.

Berries 'N' Cream Brownies

This is very similar to eating chocolate covered strawberries. To lighten this recipe up, I followed the lower fat directions on the brownie box and used a light whipped topping. Still tasted great and made for a light summertime dessert.

Butter Pecan Ice Cream

This ice cream was so good. We made this while my mom was visiting because she loves just about anything with pecans. This was creamy and delicious. I did make one minor change and omitted the butter with the pecans. I just lightly toasted the pecans in the oven. This seemed to work just fine, as everyone loved the ice cream.

Turkey Bake with Whole Wheat Pasta

The only change I made was to use cottage cheese instead of the ricotta. Everyone really enjoyed this for dinner, and I liked that it used healthier ingredients and was easy to prepare.

One-Pan Taco Dinner

This recipe is quick. This recipe is versatile. Both are huge attributes in my book. Some of us ate this with tortilla chips, others rolled up some in a tortilla. Both ways were great. And this recipe really was done in about 15 minutes. If you have already cooked ground beef, it would be even faster, so this is perfect for those busy weeknights.

Quick and Easy Pizza Crust

I love the fact that we can have homemade pizza without waiting so long for the crust to be ready. This recipe was quick, easy to spread on the pizza pan, and tasted great. Of course, you can always add your own spices to the crust as well. I have done it as written and also done it adding garlic, basil, and oregano. It just depends on your tastes. Either way, it's a great pizza dough recipe!

Dominican Style Oatmeal

I am a big fan of nutmeg, and was surprised that I had never tried adding it to my morning oatmeal. Since I am the only oatmeal eater in the house, I scaled this down to one serving. I probably used a little more than a pinch of nutmeg, and topped this with my usual raisins and walnuts. This turned out much creamier compared to using water to cook the oatmeal. Thanks!

Frosted Rhubarb Cookies

Amazing!!! I did cut the recipe in half, knowing that my kids wouldn't eat any (and 15 was more than enough for just my husband and me). These are like little rhubarb cakes. I followed the recipe, taking the idea from Dianne to top the frosting with some toasted coconut. I ran out of coconut, so a few didn't get any, and the ones with the coconut were much better. This is a great recipe to use up some of that rhubarb.

Caroline's Chocolate Fudge Frosting

As one of my kids put it, this frosting would make dirt taste good. This came together perfectly, piped onto the peanut butter cupcakes beautifully, and tasted amazing. Definitely a winning chocolate frosting recipe!
