Roast Sticky Chicken-Rotisserie Style

This is the *only* way I make roast chicken now! I use it so much that I now make a quadruple batch of the spices and store them in a jar (note: equals 5 T. of spice mixture) for the next time I make it! I don't marinate beforehand, and I've noted that fresh chicken tends to be less dry than a thawed, previously frozen chicken. (Tip: Save the bones and make your own chicken stock in the slow-cooker! The spices make the chicken stock more flavorful.)

Best Italian Sausage Soup

I had some Italian sausage and wanted to try something different - this was it! Instead of pasta, I used frozen pillows of ravioli (I've also used frozen tortellini), and served with our favorite Rosemary Bread (on this site). Excellent & delicious!

Grilled Shrimp Scampi

My husband couldn't get enough of this dish! I made a double batch of the marinade and set aside half to coat the pasta; I then marinated pre-cooked shrimp using my FoodSaver for about 45 minutes. I grilled the shrimp on the Foreman grill (lined with foil for easy clean-up) and tossed the shrimp and marinade together with whole-wheat linguine. The family loved it (although the kids didn't care for the red pepper flakes) and husband commented that it was the best shrimp & pasta he'd ever had.

Slow Cooker Taco Soup

Excellent! One of the great things about taco soup is that it can be made very quickly on a busy night, but this method of slow-cooking really allows the flavors to blend. The house smells delicious and, unlike many slow-cooker recipes, the flavor matches the scent. I usually add about three cloves of minced garlic, and serve it over tortilla chips or shredded corn tortillas, topped with pepperjack cheese and a dab of sour cream.

Super Fajita Marinade

Definitely one of the best fajita marinades I've used (btw, once you've done homemade, you can never go back to the high-salt, artificial-tasting envelopes!). I typically use about twice the garlic, and I've used regular onions when I didn't have green onions. If you have a food sealer, this works wonders with the vacuum-sealing jars.

Shrimp Jambalaya

It was OK - not nearly spicy enough, though, and it lacked the flavor of traditional jambalaya, even after adding extra spices. If I were to make this again, I would add a spicy andouille sausage and a heap of cajun seasoning. I only ancini de pepi, so I served it over the traditional hot white rice instead of orzo. My 4 and 6 year olds ate a good portion.

Garlic Green Beans

This is one of my family's favorite green bean recipes. We use cooked fresh or frozen green beans, however (much better taste). Hint: you can also do this with asparagus and broil for 5 minutes in the oven.

Award Winning Soft Chocolate Chip Cookies

I guess I've been spoiled by the "authentic" taste of real chocolate chip cookies. These were rather cake-like and didn't have that brown-sugar crisp of regular chocolate chip cookies. The family I made them for gobbled them up, however.

Awesome Carrot Cake with Cream Cheese Frosting

This cake truly is awesome! It's quite moist and dense, with a very distinct taste. I left out the nuts for my family's preference. I've also subbed applesauce for some of the oil with very good results.
