Bratwurst, Potato and Cabbage Soup

We had a cold day with several inches of snow on the ground. I had 2 extra hungry young men in addition to my two. I looked in the freezer and saw some brats and knew they couldn't be cooked on the grill because it was covered in snow. Grilling was the only way I have ever had brats. I began searching for a recipe using them and was glad to find this. But I had no cabbage. So I took the brats out of the casings and peeled several large potatoes. I diced them and cooked them in chicken broth, just enough to cover. Diced the onion and put it in there also. Added the cooked meat after I drained it really well. Added heavy cream, salt and pepper and a garlic and herb blend from Wildtree because I have a friend who sells that stuff. I had so much my dutch oven was full. I used about 2 cups or less of heavy cream, 1/2 and 1/2 would have been fine but I needed to use what I had because of the snow storm. That is all I put in it. Served it to my husband and the 4 young men who were here and it was all gone, they loved it. I only got a taste but it was delicious. Was wonderful to find such a great and versatile recipe when I was desperate to feed these man/boys. It was very heavy, perfect for the weather. I wouldn't want to serve it in the summer.

Quick and Easy Monkey Bread

My family didn't like the butterscotch pudding taste. Only one of 4 of us liked it and he even said don't make it again. We love butterscotch pudding so we thought it would be great but wasn't good. Followed the recipe exactly. Not a good taste for us.

Homey Chicken and Rice Casserole

I used all full calorie versions of the soups - doubled the recipe and cooked my chicken in a little olive oil and then added the onions. I also only had Chicken with Herbs soup on hand so i used that - also Cream of Mushroom, as I doubled the recipe and put in a 9x13 pan. I used some extra seasonings that I keep on hand. My family liked it. Don't let the photo scare you - it tastes a lot better than that photo looks

Hash Brown and Egg Casserole

Chef John's Italian Meatballs

I always make meatballs in large quantities and freeze individually on a plate and put them in a baggie in the freezer. I also have to make them dairy-free because of an allergy in my family. These turned out very well in both categories - I used half beef broth and half soy milk for the liquid and no parmesan. All I had was lean ground beef and it was fine. I used more bread crumbs than recipe called for. Also no red pepper flakes because my husband doesn't like that flavor. Was all just great. This is a very good recipe which can be altered to suit individual tastes.

Steak Soup

I really liked this recipe and especially the way you didn't have to coat the meat with flour before you browned it. That is such a yucky messy step in recipes I avoid it. I didn't have majoram or bay leaves so I used some spices I had in the cabinet and dried parsley. Turned out fine.

Strawberry Spinach Salad I

We love this salad - didn't have any of the seeds for the dressing but used slivered almonds on the salad and red wine vinegar and less sugar. Used fresh blueberries too. It was great - one reviewer used frozen strawberries - don't do that!

Best Ever Meat Loaf

I liked this meat loaf a lot. I have a dairy allergy in the family so I had to leave out the cheese and used soy milk instead of milk. I also had to use bread that was not made with dairy. Turned out delicious - I used a little extra grated carrots - I never measure that kind of ingredient. I think that is a great idea to put them in meatload. My family never even knew they were in there.

Sloppy Joes II

Tasty and simple using ingredients on hand. My family loved it. I have been doing something different with my ground hamburger and it tastes much better. Instead of adding the chopped onion with the raw hamburger - I add the chopped onion after I drain the hamburger - then I cook them both together for a few more minutes. The onion keeps it's flavor and makes everything you use ground beef and onion mixtures taste much better. My husband even notices and he isn't crazy about onions like the rest of us are.

Salsafied Chicken and Rice

What a wonderful quick meal - I needed a very fast dinner and had chicken tenderloins. I browned them and didn't cut them up. All I had was regular rice so I just barely browned them. I also didn't have salsa so I used a can of Rotel. So I had to cook for 20 min and that worked out great. With the rice, broth and Rotel I put in onion, garlic powder, Fiesta seasoning, taco seasoning and cumin. When the rice was done I added a can of black beans and a can of corn. The leftovers were even better the next day - had 2 great meals for very little effort and an awesome one pan dish.

Chicken Chimichangas with Sour Cream Sauce

My family loved how the meat tasted but not the fried tortilla part so I took the chicken mixture and used it in enchiladas and they were great. I didn't make the sauce but I bet it would be really good enchilada sauce also.

Easy White Chili

My family plus our guests liked this a lot. I didn't have any canned chilies so I added a can of Rotel. I am going to try this again soon and add a package of cream cheese to whiten it like another recipe of white chili that I have made.

Best Spanish Rice

Curried Rice Pilaf

This is a wonderful, delicious recipe. I was looking for a rice side dish recipe using ingredients I had and, oddly enough, I had almonds and golden raisins both. But no green onion so I used a regular onion, and lots of it. Thank you so much for this fantasic delight!
