5 star rating from my family, but personally, I'M not a big fan of Mexican food. I liked the simplicity in making these particular enchiladas, but for a bit more substance, I stirred a cup-an-a-half of cooked brown rice into the mixture. And when I realized I didn't have any chicken in the house, I spread some big, cooked shrimp on top of the filling before rolling up the tortillas. It turned out great... nice change from chicken IF you like shrimp! (And my daughter ate the cold leftovers the next day, and said they were still delicious!)
