Easy Refrigerator Cookies

Wow, this is one superb cookie! I did, however, make a few changes.. I subbed almond extract for the vanilla, and chopped, blanched almonds for the walnuts. Also, I skipped the roll, wrap, and refrigerate step, and I simply rolled the dough into tight little balls, and flattened with a fork like a peanut butter cookie.

Chocolate Chocolate Chip Cookies I

Fantastic recipe for chewy cookies, especially if you and the peeps love chocolate. I followed the recipe to the T, only I used white chocolate chips instead, to give a nice color contrast. As a side note, would you believe my husband said they weren't very chocolatey? HA! Not only are his eyes and ears going, but his taste buds must be failing too;)

Creamy Mushroom Spaghetti Squash

I thought I'd use up a spaghetti squash that my old auntie on the farm gave me a few months ago. I found this recipe and thought, "Perfect!" Well, the sauce turned out d-e-l-i-c-i-o-u-s, but the squash was obviously too old and too bitter for our consumption. No probs... I just made a box of Stove-Top Stuffing and we used the sauce on top of that (like a gravy) and on our roasted chicken. I will make this sauce again and maybe use it on pasta.

Slow Cooker BBQ Pork Chops

I never would've thought about using a commercial bbq sauce until I saw this recipe and tried it out. Why waste all that time making your own sauce when you can just use a bottle of your favorite sauce? The porkchops just fell off the bone, and my dad said "my" sauce was better than my mom's! (I used Kraft's Chicken 'n Rib BBQ sauce;) I added some chopped onion & whole baby carrots to the pot and served it along with basmatti rice.. a real hit!

Easy Chicken Enchiladas

5 star rating from my family, but personally, I'M not a big fan of Mexican food. I liked the simplicity in making these particular enchiladas, but for a bit more substance, I stirred a cup-an-a-half of cooked brown rice into the mixture. And when I realized I didn't have any chicken in the house, I spread some big, cooked shrimp on top of the filling before rolling up the tortillas. It turned out great... nice change from chicken IF you like shrimp! (And my daughter ate the cold leftovers the next day, and said they were still delicious!)

Bloody SPECTACULAR I say! Honest to God, these are the very best oatmeal cookies I've ever made, and my family obviously thinks so too.... a whole batch of 48 cookies disappeared literally over night!
