Broccoli Cashew Salad

Reviewed: Sep. 4, 2010
This salad is great except for the dressing. Too sweet with the cider vinegar and sugar, so I used white vinegar and cut the sugar by half. Also added shredded cheddar cheese which make it just like my favorite Broccoli Salad at Sweet Tomato. Family loved at a bbq,and taking it a friends house tomorrow who asked me to bring a salad with meat in it (they're English!).

Apple Crisp IV

Reviewed: Nov. 6, 2010
I followed this recipe exactly. I don't know what happened but it was dry and disappointing. The topping never really seemed to come together and remained a sandy texture. The only think that saved it was the scoop of vanilla ice cream I served with it. I am glad I didn't make this for company because I would have been really embarrassed. I was missing that moist apple pie type center I was looking for.

Escarole Siciliano

Reviewed: Feb. 20, 2011
We loved this recipe. Did not think the lemon was too much, as mentioned by some reviewers but we did use Meyer lemons from our tree which are a milder flavor so maybe that is why. I did not see that the recipe required 2 heads of escarole so I only purchased one, then wound up tossing in baby arugula after the salad was removed from the heat to make up for the missing escarole. I think I may almost prefer it this way in the event I prepare this again. All at our dinner party loved it but we are bitter greens lovers. The capers were especially nice! We served this as a salad/side dish with a polenta & braised short ribs - perfect to cut the creaminess & fattiness of the other items served.

Rusty Chicken Thighs

Reviewed: Apr. 29, 2015
This was easy to prepare, common household ingredients for us except for the lime, which I did pick up, and the flavor was way beyond our expectations! I did make one sub in the marinade since I didn't have any sambal, I used sweet chili Thai sauce instead and added a few dashed of hot sauce to replace the heat. used skin on/bone in chicken (2 breasts, 5 thighs so I prepared a double recipe of the marinade) and it came off the grill looking like a picture and so fragrant! The garlic, soy and chili lend such awesome flavor but they can be over powering on their own. The maple syrup & mayo round out these flavors nicely and the rice wine vinegar I think just brings everything together. I do agree with some that the marinade smelled a bit weird but the chicken was divine!
