Potato Chips

5 ½ - 6 minutes in my microwave. Sprayed with olive oil cooking spray, then sprinkled with coarse sea salt prior to cooking…So good!!! All the taste & crunch without any of the fat of "regular" potato chips!

Easy Vodka Sauce

Very simple; very good. Stayed pretty true to the recipe, but did halve the butter and used an equal amount of olive oil. I also added a bit of salt. I allowed plenty of time for the alcohol to simmer out before adding crushed San Marzano tomatoes, then let the tomato mix simmer long on low heat (about an hour) before adding the cream at the end. Got lots of compliments! Will definitely make this one again!

Slow Cooker Italian Beef for Sandwiches

Baked Scallops

A bit salty. Maybe less cheese? Used seasoned panko crumbs, omitted all seasonings but paprika. Mixed 2 additional Tbsp melted butter with crumbs before topping.

White Castle Turkey Dressing

This recipe was, indeed, simple...but absolutely nothing special. I increased the broth (I used turkey broth instead of chicken) to 1 full cup, and it was still dry. It had a pleasant flavor, but certainly not nearly as good as traditional turkey dressing. The frozen White Castle burgers were not cheap, either. In the future, I will go back to traditional, sausage-bread-celery-onion-walnut-cranberry stuffing, which, at least, is worth the effort.

Ramen Cabbage Salad

I left out the ramen seasoning packet, pan-toasted the ramen noodles & slivered almonds in sesame oil, added a can of (drained) mandarin oranges. Also, I found a low-fat version of the ramen noodles (which are normally very high in fat content). I substituted rice wine vinegar in place of the distilled vinegar. Excellent! Everyone who tasted it asked for the recipe!

Buffalo Chicken Chili

This is a nice version of an old standard! Using the ground chicken (or even extra lean ground turkey) brings down the fat content, but adding just a little butter adds the flavor back. The butter and Buffalo wing sauce blends together to give it the "Buffalo Wings" flavor...Very good!

Creamy Garlic-Green Bean Casserole

I'm sorry to say that I was disappointed with this recipe. It wasn't bad...it just wasn't good enough to make again. The only change I made was to use fresh, pre-steamed green beans (can't stand the frozen or canned versions). The finished product was bland and unmemorable.

Maple Cookies

These cookies were simple, and my entire family loved them! It's well worth the money it costs to purchase the real maple syrup (Mrs. Butterworth's simply would not do well here). The maple taste was subtle, but very good. I'll certainly make them again!
