This is a great base muffin recipe, something you can use with blueberries or other ingredients. However, I modify the base recipe to make it healthier.
- 1 1/2 cups of regular flour, 1/2 cup whole wheat
- HALF the sugar, or use about 3/4 of honey
- Add generous amounts of wheat germ, flak seeds or sprinkle in some multigrain hot cereal (3 table spoons or more)
IMO these muffins are superior and offer a nicer texture than the wonderbread texture of most commercial muffins.
