Oat Waffles

My husband made these this morning and I told him these were the best waffles I had ever eaten. Honest. He used steel cut oats and put them in the food processor, then followed the rest of the recipe exactly. I am so excited these don't have tons of butter or oil. Thank you so much for this recipe!

Pumpkin Flax Quickbread

Fantastic! I followed the recipe almost exactly (except substituted 1/2 c of the sugar with the equivalent of Stevia and used 1 c AP flour and 2/3 c ww flour) and the bread was so moist! I made mine into muffins, as I find it easier to get the 12 servings that way. Otherwise I don't quite get 12 slices out of the loaf! I baked them at 350 for 23 minutes. They came out great! Thanks for sharing.

Brown Rice Breakfast Porridge

This was the first time I'd had brown rice breakfast porridge, and it was good. I don't know if I'd ever have it again, and I certainly wouldn't make rice specifically for this. But since I had some leftover, it worked out.

German Puff Pancakes

This did not taste anything like a pancake. I should have figured that out, however, as the recipe calls for 6 eggs and only one cup of flour. It tasted more eggy than anything else. Overall it didn't taste bad, but it definitely didn't taste like a pancake.

Addictive Sweet Potato Burritos

So interesting! I enjoyed the flavor, and one was certainly enough to fill me up! I even used smaller tortillas than it suggests and ended up making more. These are now frozen and I look forward to heating them back up in the near future, when I don't have time to cook!

Chicken Tortilla Soup V

This was delicious! I baked up some corn tortillas in the oven to cut the fat out of regular tortilla chips, and crumbled those into the bottom of the soup bowl. Make sure you put the chips in the bottom of the bowl before you pour in the soup; the chips will soak up the soup broth nicely and the soup will thicken up. If you don't want to have to cook the chicken breasts, you can use 2 cans of shredded chicken instead.

Microwave English Muffin Bread

After all the rave reviews, I was most disappointed at how bland this tasted and how dense it was. Mine came out looking just like the picture and I followed the recipe exact; but when I went to cut myself a slice the edges were very tough and it did not taste anything like an English Muffin. I still had almond butter with it and it filled me up, but don't think it can be qualified as an English Muffin.

Butternut Squash Risotto

When I first made this, I could not stop eating it out of the pot before I finally gave myself a healthy serving into a bowl. It was so creamy and delicious! When I went to reheat some leftovers today, however, it was very, very thick and I needed to put some milk in it to thin it out. Like some other people, I left out some of the stock, which I wish I hadn't now. If you are going to eat the whole recipe in one sitting, then omit some of the stock. But if you think you will have leftovers, don't! Overall very delicious!
