Delicious Ham and Potato Soup
Great creamy soup. Made as the recipe directs. Husband approved. The kids inhaled it. My sister-in-law who doesn't like cream of potato soups really liked it and went back for seconds. Served with homemade wheat bread for a filling cold weather meal.

Chicken Enchiladas II
This recipe doesn't have the wow factor, but it isn't bad either. It's a quick weekday meal that everyone can fill up on and enjoy. No hot spicy flavors here, which is good for families with younger children who prefer more mild tastes. I used whole wheat flour tortillas and spread a little sauce on the bottom of the pan to keep the tortillas from drying out and toughening up during baking. A good basic recipe to add variety to the weekly dinner menu.

Asian Beef with Snow Peas
Wow...I am IN LOVE with this dish! The ginger sauce has a classic flavor, not too strong, but not too weak. I doubled the sauce since my hubby likes extra on his rice and I didn't use fresh ginger root because I didn't have time to go to a bunch of grocery stores looking for it. I used regular ground ginger instead and it was still good. This is not a spicy dish, so it's very kid-friendly. I have a five-year-old and three-year-old twins who gave it two thumbs up. Definitely a keeper!
