I normally LOVE a good eggplant parmesan but this recipe was disappointing. 3 eggplants is WAY too much, I think 1 or 2 at the most would have been better. I thought the taste was rather bland, needed some spicing up. And it definitely needs to be baked longer on each side before putting dish together. 5 minutes on each side did not crisp it at all, it didn't even brown. I suggest leaving it in for 10 minutes per side. I may make this recipe again with some major alterations but it doesn't look promising.
