Grilled Yams

I saw these in the magazine and thought it would be a nice change of pace. It was good, but a very basic recipe. Next time I would spice it up, thanks for the idea!

Skewered Grilled Potatoes

Fantastic! I used 2 large cloves of garlic minced and added salt and pepper instead of the garlic salt. What a great and easy side dish.

Quinoa and Pepper Pilaf

This turned out to be a great side dish for us! I used Swanson chicken broth instead of vegetable. I also replaced the yellow pepper with green and added salt and pepper to taste. This would go really well with chicken or fish. I will make this again for sure!

Smothered Pork Chops from Swanson®

This is great! I added a lot of extra seasoning because the recipe itself doesn't even call for salt and pepper. I also used Swanson chicken stock instead of beef. I added mushrooms with the onions and garlic and I also added the suggested Dijon mustard and Rosemary. My boyfriend loved this!

Southern Potato Salad

This was great! I added some apple cider vinegar, dill, and forgot the garlic. I used 6 small potatoes, which was just about 2 pounds. I think the recipe should specify that but it's okay. I boiled my potatoes for 15 minutes, drained them and left them in the colander with a clean rag over them to let them continue to cook while I made the dressing. I did not peel them because I like the added texture of the peel left on. I always like to dress my potato salad while it is still warm so the potatoes can absorb the dressing. I also added some extra salt and pepper since potatoes can usually handle a lot of seasoning. This turned out fantastic! Thanks for posting!

Parmesan Asparagus Rice

Yum! I had the 90 second basamati rice microwave pack so I modified this a bit. I sautéed the onion and garlic in 1/2 butter 1/2 olive oil. I added about 1/4 c. of fresh lemon juice and the asparagus and sautéed about 5 minutes. Meanwhile I prepared the rice according to the package directions. I added the rice as soon as it was done. I added additional salt and pepper, fresh chopped parsley and parmesan. I added additional lemon to each serving. This was fantastic! It was so easy to make too!

Super Veggie Chicken and Wild Rice Casserole

This was so good! My end product was pretty soupy though. Next time, I will cook the rice and veggies first, then I'll combine everything and baked until the cheese is bubbly. I added some extra seasoning too and served this with hot sauce. Everyone loved it!

Balsamic Roasted Fennel and Acorn Squash Rice Casserole

Great easy recipe! I cut my vegetables once they were cooked and added some extra balsamic at the end. I also added some additional seasoning. This is a very good side dish. If you like fennel, you should definitely try this. It's a good way to try something new.

Ham and Fresh Basil Pinwheels

This was so quick and easy! I made this for an appetizer so I changed a few things. First, I only used half the cream cheese and I mixed it in the food processor with the sun dried tomatoes and basil. I didn't use nearly the amount called for in the recipe, but did it to taste really. Maybe 8 basil leaves and 1/3 c. Sun dried tomatoes. I used whole wheat tortillas too. Once they were chilled, I cut them into about 8 pieces per roll, so I got about 24 appetizers from 3 12" tortillas. I'm gonna make the cream cheese again for another party I have this weekend, but I'm gonna try it with salami and add some banana peppers so it's kinda like an antipasto wrap! Thanks for the idea, these turned out great!

Crispy Orange Beef

This was excellent! I added some extra soy sauce but that's the only change I made. I served mine over cauliflower rice and regular white rice for my family. A nice Asian salad rounded out the meal. We will for sure be making this again!

To Die For Blueberry Muffins

We went blueberry picking so I was looking for some ways to use the berries up. These turned out pretty good. I think buttermilk and some lemon zest may take this to another level. I would make those additions next time to see if that helps. This was very easy to make and were gobbled up! Thanks!

Spicy Eggplant

This is such a great way to use eggplant! I added some chopped chicken thighs for my men and served this over cauliflower rice. It turned out sooo good and made a great vegetarian and non- vegetarian dinner!

Sweet Hot Mustard Chicken Thighs

We loved this! I had to make a few minor changes because of lack of ingredients but it still turned out great. Mine didn't have enough sauce after baking to pour into a sauce pan to reduce but that could be because of my changes. I used chicken thighs, legs and wings. I omitted the vegetable oil altogether and I don't think it needs it. I will definitely make this again.

Mexican Oxtail Beef Soup

Great! I adjust the seasonings to our taste. I didn't add lentils or the frozen veggies. I also like to serve the rice on the side so everyone can add as much or as little as they want. I serve it with tortillas, lime wedges and cilantro! Yum!

NO YOLKS® Asian Vegetables and Chicken in a Spicy Peanut Sauce

Absolutely delicious! I had to use regular No Yolks because I couldn't find Kluski noodles anywhere, but it was still delicious. I used fresh veggies and a little sambal Olek for extra heat. Some chopped cilantro, a squeeze of lime juice and an ice cold beer and you are all set with this one!

Mediterranean-Style Eggplant Pasta

This was delicious! I made this almost exactly as written too (which I don't normally do). I used regular fettuccini because that's what I had on hand. I served it with some chicken scallopini, garlic bread and salad. Such a good recipe!
