Easy Corn Chowder II

Reviewed: Jan. 28, 2003
Loved this recipe!! I doubled, we are a family of 9. I used canned potatoes so I skipped that chore. I also sauted some celery with the onion in olive oil, skipped the water bit. Then added a bit of chicken flavored boullion powder after the milk. All tolled it was ready in around 30 min tops, from start to finish! It is so easy to change and enhance. I would try adding dill next time or mabey green chilies for a spicier version, no cayene use a splash of tabasco. You are NOT going to mess up this one. This is a great spur of the moment adder to a meal or pot luck. Kathar

Granola

Reviewed: Sep. 17, 2002
Absolutely wonderful. Had everyone guessing at the ingredients and eating it as a snack food. I added the sliced almonds and a cup of coconut with the oats and first mixture and toasted/dried them together and it worked well. I also added 1/4 cup of honey because of the extra ingredients and to get a pinch of honey flavor. A+++++++++ in my book and a definate keeper. What a way to use old bananas too!!! Tip don't put too muck on a pan if you want a dryer or toastier taste keep it single layer.

Easy Cream Cheese Pie

Reviewed: Mar. 21, 2004
Easy, double the cream cheese and have it at room temperature. This cuts down on the over powering sugar. I topped with blackberries. Family winner. Easy on the cook too.

Southern Macaroni and Cheese

Reviewed: Oct. 18, 2001
I am a mother of 6 children and often have 7+ little ones at the table, not to mention a hungry father. This is an ideal dish. It mixes ease, nutrition, and child appeal all in one package. It can be served as a main dish or a side dish. I also took it as a dish to the Synagogue and not one macaroni was left!!!

Jelly Doughnuts

Reviewed: Dec. 12, 2001
We used this for our Channukah Jelly doughnuts, a tradition. What a breeze!!! The kids loved making them after they came out of the machine and eating them even better. The taste was fabulous. I fried them in hot peanut oil. It freed up time do do other holiday things. and We used orange marmalade one day and loquat jelly the next day. Tomorrow, poppy seed or almond cream!! Thank you to the person who submitted this one!!!!

Easy Salmon Cakes

Reviewed: Jan. 8, 2002
Had to increase to 12 servings for my large family but went over VERY well. I had to limit the children or all else would have been forgotten save the salmon cakes! I fried in Olive oil and the flavor was great. I also mixed it all in the processor and saved another dirty dish, adding salmon at the very last and pulsing only a bit. Definitely a new family standard.

Found the recipe easy and useful as a base. A bit bland for us so I tossed in some oil and vinegar. Worked well.

Peanut Sauce I

Reviewed: Apr. 29, 2004
This is a super easy recipe and basically no flaw. I give it a 5* for that reason alone. I did use soy sauce instead of tamari, and added 1t ginger paste, 3 finely diced green onions with tops, 1t minced garlic and 1/4 cup finely diced red bell pepper. You wouldn't have to add it but I always change recipes up. lol I poured it over bow tie pasta. Next I will try lightly sauted vegies.

Absolutely Perfect Palak Paneer

Reviewed: Mar. 21, 2004
Good as a basic starter. I changed it ...a bit. I added 3 fresh bay leaves, doubled all the spiced and tripled the red peppers, 1/2 whole 1/2 crushed. I also added 2 tbs of garam masala and 2-3 Tbs of pickled ginger. I used frozen spinach and this cut down the water content. DO NOT BLEND, it will wreck the texture, simply begin with chopped frozen spinach...2 16oz bags. I used queso fresco NOT ricotta. Just cube and deep fry it till brown first. With these changes it was awesome all the kids loved it too. Well one of the six didn't try...lol Just like the restraunts... I know my Paneers. Oh, and mine took more sour cream because their was not a lot of liquid. Good balance. Served with Rice and a sweet raisan nut couscous.

Carrot Rice Nut Burger

Reviewed: Jan. 23, 2003
This was good but I did it as a loaf and increased the dry ingredients. It was a bit moist and took wayyyyyy longer to cook than stated. Children and dh enjoyed so that was all that counted.

Beef, Green Chili and Tomato Stew

Reviewed: Oct. 18, 2002
This is the best Green Chilie Stew ever! I doubled the recipe, used a large roasting pan, and put it in the oven at 350 degrees. I would use a crock pot if singling it. I didn't have a beer so I left that out, but added a couple of bay leaves off my tree. It made a wonderful Shabbat meal!!

Maryellen's Baked Onions

Good recipe and original. Great for those looking for inexpensive dishes. I chose to bake all day thought and they carmelized well. Used them on Matza as an appetizer and then on the baked potatoes for our meal. Flavor was wonderful.

Cranberry Nut Bread I

Reviewed: Dec. 2, 2004
Wonderful recipe. I did chop the cranberries, it definitely helps blend the flavors better. I doubled the recipe and used 3 eggs not 2. I also didn't have the zest so I used frozen concentrated orange juice. I also doubled the oil. It came out wonderful!! This is a great simple no stress recipe.

Vegan Brownies

Reviewed: Apr. 10, 2013
Very good basic recipe but I agree too much oil. I lowered it to 3/4 cup and increased the almond milk I used in place of water to 1 1/2 cups. I also increased the cocoa to 1 cup, and added 2 tsp of cinnamon, 1/4 tsp cayenne powder, 2 Tablespoons of arrowroot powder and 2 tsp of baking powder for a more cake like brownie. I increased the time to 45 minutes as well. I enjoy taking a simple and good recipe and shifting things slightly to fit our tastes and what we have on hand.
